Duck Appetizer Chaffle with Rhubarb Topping

This Duck Appetizer made with a smoked duck breast is low carb and keto friendly when served on a savory chaffle instead of crostini! It is topped off with a tiny bit of sugar-free rhubarb topping and a few snipped chives.

This is a great cold appetizer to serve with a glass of chilled CK Mondavi and Family Merlot to family or close friends while playing a game of Bocce Ball or Corn Hole.

Challenging Times for Gatherings of Family and Friends

The year 2020 has certainly brought along its many challenges this year. We are all having to be socially distant making it hard to enjoy fun times with friends. We have our small circle of family that we stay in contact with on an occasional basis, and have Chris and Miriah living in our home with us, with soon to be new grandson. 

Our home went from me being here all day working alone, to 4 people in the house and only 1 of them leaving 5 out of 7 days to go to work outside of the home. My trip to Spain to visit my oldest son had to be cancelled, and we are all trying to learn how to live in this new lifestyle and deal with the stress that goes along with it.

Making Time for Fun and Games

That is why it is so important for us to make time for each other, as well as learning how to keep our distance and allow everyone their own quiet time as well. The one time that we all do come together is at the dinner table or fire pit. We enjoy good food and games. 

The Mondavi Family is passionate about Bocce Ball, and sent their ambassadors a game for us to enjoy their passion as well. Cornhole has always been a fun game for our family, and this year, Grumpy did a Cornhole DIY for Honeybunch Hunts.

Now we can relax in the evening, have a glass of wine, some great food, and play games together.

Experimenting with Smoked Duck Breast

I had some Duck Confit and Smoked Duck Breast in the freezer and had been going through all different types of scenarios in my mind about how I would serve it to my family, especially Grumpy! My experience with Duck has been limited and what we had tried in the past was not palatable to us.

However, I happened to try some at the farmer's market last year and was impressed with how good it was. While it isn't something we eat on a regular basis here, it is something to enjoy on a special occasion. 

In these trying times where we have to be so careful about social distancing it is nice to have a plan with some special food and wine. That is where this Duck Breast Appetizer came into play.

What You Need To Make this Smoked Duck Breast Appetizer

1-small smoked duck breast - the duck breast I had was a 4 ounce package and had a very super thin layer of duck fat on it so it did not need trimming. 

Part-Skim Shredded Mozzarella Cheese

Large Eggs

Sugar-Free Jam or Sugar-Free Rhubarb Sauce

Fresh Chives

Hand Whisk 

Mini Waffle Iron this is to make the chaffles, which is the base of the appetizer. Super affordable and I loved mine so much I bought two (one has a snowflake center!). If you are keto, then this mini waffle iron will be a game changer for those who are keto bread challenged.

Smoked Duck and CK Mondavi and Family Merlot Pairing

While I am a fan of all CK Mondavi and Family wines, I really enjoyed this Duck Appetizer with the Merlot. Normally I don't chill red wine, but because it has been so hot and humid here, I went ahead and dropped a few ice cubes in.

I was surprised to learn that Randy Herron, head winemaker at CK Mondavi and Family, has actually put ice in his Merlot! I also found out that the Mondavi's love duck, so what better treat to serve my keto appetite than the smoked duck breast I had in my freezer?

After I had made the jam I was thinking a blackberry or cherry jam would be great with this as well and make a little merlot in the jam. 

CK Mondavi set us up for a great family party of four. While only three of us were able to enjoy wine (as Mrs. Snow is expecting our first grandson next month!), we all had fun enjoying the duck and spending time together. We look forward to more summer evenings with a glass of wine, food, and games!

Recipe Tips and Substitutions

  • Set the duck breast out about 30 minutes before slicing to make slicing easier. 
  • If the duck breast has a thick layer of fat, trim it off and store it for later use.
  • Use only ¼ cup of egg chaffle mixture to prevent seepage from the waffle iron
  • Swap out the onion and garlic powder for cinnamon (½ teaspoon) and nutmeg (¼ teaspoon).
  • If duck appetizers aren't your thing, swap out the duck for thinly sliced pieces of steak, chicken, or pork loin.

  • 3 ounces smoked duck breast thinly sliced
  • 4 large eggs

This recipe was inspired by the Thai Basil Beef recipe from my One-Pot Paleo Cookbook (affiliate link), only this time I used sliced venison tenderloin instead. It's a great way to enjoy your wild game with Asian inspired flavors, and if you're serving it with my Cauliflower Fried Rice, it makes for a delicious low-carb dinner the whole family will enjoy.

  • 2 tablespoons ghee divided
  • 1 pound venison tenderloin thinly sliced

Carrot Cake Energy Bites

These Carrot Cake Energy Bites are an easy to make raw recipe that a healthy snack that tastes like carrot cake! They get their sweetness from the medjool dates, carrots, vanilla, and warm spices. And, the rolled oats, raw pecans, and white chia seed pack in a healthy amount of nutrition, fiber, and vitamins.

Carrot Cake Protein Balls

This is a no bake snack carrot cake flavored recipe tastes delicious and is perfect as an after workout snack. These carrot cake energy balls are ready in just 15 minutes and are easily stored in the fridge or freezer.

Putting Grumpy's favorite cake flavor into a healthier snack recipe!

It's no secret here that Grumpy's favorite cake is a carrot cake. However, just because he loves it does not mean he gets to eat it all the time. I usually make a carrot cake once a year on his birthday, and that is it!

When trying to come up with some healthy snack Ideas I decided to mix one of Grumpy's favorite flavors with one of my favorite stone fruits, the medjool date and make a healthy snack ball recipe!

What you need to make this recipe

Medjool Dates: Sweeten the carrot cake energy bites. They also pack a good amount of fiber in the recipe.

White Chia Seeds: these are used to boost fiber. if you don't have white chia seed, then black works just as well.

Gluten-Free Rolled Oats: Whole rolled oats are the best.

Raw Pecans

Carrots

Cinnamon and nutmeg

Vanilla extract

Salt

Small Cookie Scoop (optional)

Food Processor (necessary)

Recipe Tips

  • Make sure any pits are removed from the dates prior to processing.
  • When processing the ingredients in the food processor, use the pulse button rather than continuously run the processor.
  • Shred the carrot to reduce the number of carrot bits in the energy bite.
  • Use a small cookie scoop to get even portions.

Ingredient Substitutions and Adaptations

  • Substitute black chia seeds or hemp seeds for the white chia seeds.
  • Substitute raw walnuts in place of the pecans.
  • Use an orange flavored extract in place of the vanilla.
  • Roll the carrot cake energy bites in shredded coconut or chopped raw pecans once they have been shaped.

Keto Chicken Baseballs Recipe

Keto Conversion

One of my very favorite recipes to turn to when I wanted something easy and delicious was my regular Chicken Baseball Recipe. I loved how the savory cream cheese, chicken, and mushroom filling contrasted with the golden buttery crescent roll dough.

Once going keto however, that recipe was off the menu. I played around with the idea of making it keto but never did. Until last summer. The kids were home and I was making the Chicken Baseball recipe for them. So, I decided to also make a Keto Chicken Baseball at the same time.

How I adapted this recipe

The filling is the close to the same, but the crescent dough had to be substituted. I decided to make a low carb pizza crust recipe that has become my go-to pizza crust whenever making keto pizza.

I substituted the bread crumb topping with ground pork rinds that I mixed with some Italian seasoning. A full fat version of cream cheese was used instead of reduced fat and heavy cream for the milk.

Tips and substitutions

When making these Keto Chicken Baseballs, you need to keep in mind that it is a fragile recipe. The dough is not the same as a gluten filled crescent roll dough. It can tear easily. Below are some ways to make sure that your keto chicken base ball turns out the way it should and some substitution ideas for other ingredients in the recipe

  • The keto pizza dough is fragile. You need to roll it out a little thicker than you would if you were making pizza crust.
  • I highly recommend using fresh mushrooms. Canned mushrooms leave a tinny flavor to the recipe.
  • Substitute leftover cooked chicken for the chicken tenders.
  • Substitute thawed frozen peas for the mushrooms
  • Brush the dough with egg yolk to aid in browning and help keep the dough firm.

  • 1 Low Carb Pizza Crust Recipe
  • 8 oz fresh sliced mushrooms
  • 2 tablespoon butter divided
  • 4 oz cream cheese softened

  • Cut the rolled out keto pizza dough into 4 sections. Place ¼ of the chicken mixture into the center of each section.
  • Pul the dough up over the top of the chicken mixture and seal.
  • Place the chicken baseball seam side down on a parchment lined baking sheet. Mix the pork rinds and Italian seasoning together and evenly sprinkle over all 4 chicken baseballs.
  • Bake for 20 minutes, or until dough is golden brown.

Grumpy loves the regular recipe for pigs in a blanket made with the crescent roll dough. Because of this, I wanted to make something similar that would work for the keto diet. They still be tasty enough so my picky eater would not complain I had ruined his favorite pre-keto food!

I used a low carb pizza crust recipe and cut it in strips to wrap around the cocktail franks. Then I sprinkled them with some Everything Bagel Seasoning before baking.

My picky eater enjoyed these keto pigs in a blanket, and it is a Grumpy approved keto appetizer recipe!

Cocktail Franks: I like to buy the beef cocktail franks. I think they have better flavor, but choose whichever ones you like.

Strawberry Rhubarb Pudding Cake is a homemade vanilla cake baked with a strawberry rhubarb sauce poured over the top before baking. The sauce sinks to the bottom, magically forming a pudding layer beneath the cake.

  1. Preheat oven to 350 degrees. In a large saucepan, combine rhubarb, strawberries, and ¾ cup sugar. Cook over medium heat for 12 minutes, or until fruit is tender. Remove from heat and set aside.
  2. In a small mixing bowl, cream the butter, and the remaining ½ cup of sugar. Beat in egg and vanilla.
  3. Combine the flour, baking powder, and salt. Add to the creamed butter mixture alternately with the milk. Beat until just combined.
  4. Pour into a 9-inch square baking pan coated with cooking spray. Pour the rhubarb sauce over the cake batter.
  5. Bake for 30 minutes, or until a toothpick inserted near the center comes out clean.

Unlike a chocolate pudding cake, where you pour boiling water over the cake, in this recipe the hot strawberry rhubarb mixture is poured over the cake. It sinks to the bottom of the cake due to the fact the sugar content is higher in the sauce than the cake batter and the end result is a vanilla cake with a strawberry rhubarb pudding bottom.

This easy Green Chicken Enchilada recipe is a low carb take on the traditional enchiladas. It is a great Mexican recipe to serve for themed nights and on Cinco de Mayo and one the whole family will love.

This will easily become one of your favorite enchilada recipes. It is the perfect Mexican recipe for those who don't like spicy food and these creamy green chile chicken enchiladas are packed with flavor.

❤️ Why I Love This Recipe

✔️ It is a quick and easy chicken enchilada recipe recipe that is packed with flavor, has 23 grams of protein and and only 7 net carbs per serving!

✔️It is a great recipe to use any leftover chicken you may have, or you can just buying a rotisserie chicken is a great way to make it easier.

✔️ It's easy to double the recipe and freeze the 2nd batch to have on hand.

Low carb tortillas or homemade tortillas recipe (if low carb is not necessary)

Homemade green enchilada sauce, or store bought

Sour cream

Leftover cooked chicken, I like to use leftover rotisserie chicken

  1. Preheat the oven to 350 degrees. Coat the bottom of the pan with cooking spray
  2. In a large mixing bowl, mix together the enchilada sauce and ½ cup of sour cream until well combined.
  3. In another bowl, mix together the chicken, cilantro, ½ cup of the enchilada cream sauce, and 1 cup of the shredded cheese. Stir to combine.
  4. Place one tortilla on a cutting board and spoon 2 tablespoons chicken filling on one side of the tortilla. Roll to enclose filling.
  5. Place tortilla seam side down in a casserole dish that has been coated with cooking spray.
  6. Cover tortillas with remaining enchilada sauce. Sprinkle with remaining cheese. Cover the casserole dish with foil and bake for 30 minutes, or until sauce is bubbly and filling is hot.

Is salsa verde the same as green enchilada sauce?

Salsa verde and green enchilada sauce are very similar, however green enchilada sauce is cooked where as salsa verde is not.

Can I substitute salsa verde for green enchilada sauce?

Yes, salsa verde is generally a good substitute for green enchilada sauce.

  • If making the homemade the green enchilada sauce, do so ahead of time so it is ready when it is time to assemble the enchiladas.

This recipe is super easy when there is leftover chicken or even leftover turkey. However, it is just as easy to cook a couple of large chicken breasts in the slow cooker with ½ cup of chicken broth, salt, and pepper on low for 6 hours. Shred the chicken, measure and use in this chicken enchilada recipe.

  • ¾ pound ground venison

This Homemade Cocktail Sauce is tangy, just the right amount of spicy, and comes together in under 5 minutes. It's a bold and flavorful dipping sauce that's perfect for boiled shrimp or even as a zesty dip for your favorite white fish.

I've always kept cocktail sauce in the fridge, but once I realized how easy it was to make it from scratch, and adjust it to exactly to how we like it, I stopped buying the store bought version.

It reminds me of how much I loved making my own condiments like my Homemade Tartar Sauce, or even Easy Homemade Basil Pesto. You can save money and skip the added sugar by making this homemade version instead.

My non-keto family loves to make a sandwich with this Homemade Soft White Bread. Egg Salad sandwiches make a great portable lunch that is filling and tasty.

A long time family favorite

All my childhood, the Classic Egg Salad recipe was one of my favorite sandwich fillings. Mom always would stir some sliced green olives into the mixture, adding a touch of salty, briny flavor. I loved biting into the sandwich and getting that toothsome bite from the green olive.

Mom made egg salad sandwiches because they were economical, but also because we just planed loved them. I remember her packing up a lunch for us to take to go berry picking in the summer and we always had egg salad sandwiches as a choice.

What is great about this keto egg salad recipe is that it is naturally low carb! With our keto lifestyle, this low carb egg salad is one of the number one go-to recipes to make for something delicious, quick, easy, and inexpensive.

What you need to make this Egg Salad recipe

This is probably the most simple and affordable sandwich filling to ever make. I prefer it over tuna fish any day. The hardest part might be peeling the hard-boiled eggs. Sometimes I am egg challenged that way!

The good part is, the egg whites don't have to look perfect like I would like them to when making my favorite deviled eggs recipe! Below is what you need.

Large Hard Boiled Eggs: to get perfectly boiled eggs, put the eggs in the saucepan, run cold water over top to just cover.

Bring the eggs to a boil then turn off the heat immediately. Set the timer for 15 minutes. Remove hot water and cover in cold ice water. Perfectly cooked every time!

Seasoned Salt: I like an Everyday Seasoning grinder salt that I buy from Trader Joes. You can also buy it online if you don't have a Trader Joes close by. However, you can use whatever seasoning salt you have in your home as well.

Cayenne Pepper: I like the tiny hit of heat this gives as well as the flavor.

Mayonnaise: I only use full-fat mayonnaise.

Green olives with pimentos: I like to buy presliced, but whole pimento-stuffed olives work fine and just slice them up yourself.

Make this recipe your own

There are SO many ways you can doctor up this egg salad recipe to make it fit your own flavor profile favs. Below are a few ideas to consider.

  • Add a tablespoon of finely chopped green onions, finely chopped celery, or carrots for added crunch.
  • Stir in a teaspoon of yellow mustard. We also love this Sweet & Spicy Mustard. I usually find it on the top shelf in the condiment aisle of our grocery store (may not be available in all stores).
  • Use a mixture of green and black olives.
  • Substitute full-fat Greek yogurt in place of mayonnaise and add a teaspoon of lemon juice to thin it out.
  • Add a tablespoon of dill pickle relish.
  • Stir in two cloves of freshly minced garlic.
  • Serve it over a bed of lettuce and sprinkle it with crisp cooked bacon, or stir the bacon in and make a sandwich.
  • Substitute regular salt and pepper for the seasoned salt and cayenne pepper.

How To Make Keto Banana Bread

Below is a quick visual on how to make keto banana bread. It is as easy as mixing dry and wet ingredients separatey, then mixing them together!

In a large bowl whisk together the almond flour, coconut flour, monkfruit, salt, and baking powder. Set aside.

In a medium bowl, whisk together eggs, melted butter, mashed bananas, and vanilla extract.

  • Cut the eggs in half lengthwise. Remove the yolks and place them in a small bowl.
  • Set the egg white portion of the eggs on a serving tray.
  • Mash the yolks with a fork until the egg yolks are fine crumbs. Add the mayonnaise, mustard, and pickle relish. Add salt and pepper if using. Stir to combine.
  • Transfer the yolk mixture to a baggie. Snip the end and pipe the yolk mixture into the egg whites.
  • Top the eggs with crumbled bacon and chopped green onion tops (if using). Refrigerate until serving.

It is great to set out for parties or just make for a Friday night at home with a glass of wine, Parmesan Cheese Crisps for dipping and a good movie.

I love a baked Spinach Artichoke Dip. Just hand me a spoon and I'm good to go!  This dip is one of the only ways I can even get Grumpy to eat an artichoke. He is a huge spinach fan though and he never noticed the artichoke!

A naturally low carb keto dip recipe

This is a naturally keto spinach artichoke dip recipe. Made with only 6 ingredients. And, all of the ingredients just happen to be keto-friendly, making it very easy to enjoy without guilt! This recipe has 3 net carbs per serving (8 servings).

The carbs in this recipe, however, are all vegetable carbs. From the spinach, and artichokes. So, in no what whatsoever are they bad carbs. If you're going to eat a few more carbs, these are the kind to enjoy.

No matter who you serve this to, they will not care what type of recipe it is. They will only care that it is delicious and want to eat it!

What you need to make this Spinach Artichoke Dip recipe

Artichoke Hearts: I buy these canned and just chop them up coarsely.

Sour Cream: Use full-fat sour cream. It has the best flavor and for a keto recipe, you will want the fat in the dish.

Cream Cheese: The same goes for cream cheese, use full fat. Most reduced-fat cream cheese has added starches. Something you don't want on keto.

Tips for making Hot Spinach Artichoke Dip

  • Be sure to squeeze as much water from the spinach as possible. Then break the spinach up when adding it to the cheese mixture.
  • Be sure to use shredded parmesan and not grated. You can buy pre-shredded in the refrigerated section of the store, or you can buy a brick and shred your own.
  • Ceramic baking dishes work best for this dip. It heats evenly and is no stick.

Other ways to make this keto dip

  • Add 1 cup chopped cooked or grilled chicken or shrimp to the cheese mixture in step 3.
  • Spice it up with ½ teaspoon chipotle powder for a slight hit of heat.
  • Omit the artichoke and Saute some and 2 cups mushrooms ¼ cup diced Red pepper, 1 small diced jalapeno pepper, and ¼ cup diced onion. Stir into the cream cheese mixture.
  • Top the artichoke dip with crumbled, crispy cooked bacon after removing from the oven.
  • Swap the parmesan cheese for asiago cheese. Asiago has a strong intense delicious flavor that goes well in this dip.

Bubble Up Pizza Casserole is made with ground hot Italian sausage, pepperoni, pasta sauce, and unbaked canned biscuits. It is a quick and easy dinner recipe that the kids will love that is ready in just 30 minutes!

A convenient and easy casserole made with biscuits is great for those busy weeknights. Bubble Up Pizza Casserole is easy to make ahead of time and reheat just before your ready to eat dinner. It goes great with a serving of Caprese Salad!

A popular retro recipe and my keto option

This Bubble Up Pizza Casserole recipe was popular when my kids were young. It was a Pillsbury recipe that became popular because of the ease of making and its taste! For 1 serving, you will have 25 carbs, which, when allowing yourself a low carb diet, is not bad.

While for the most part, I stick to keto, I will incorporate a recipe like this that is not keto as a rare treat. I do make this for the rest of the family on our weekly family dinner sometimes.

When I want to stick to keto, I will reserve 1 cup of the filling (see pic above) and put it in a small single-serving casserole, top with the cheese and bake it for a 6 net carb pizza casserole dinner.

What you need to make Bubble Up Pizza Casserole

Hot Italian Sausage: We love spicy sausage on our pizza. I always buy ground hot Italian Sausage for this recipe. It adds a ton of flavor without packing too much heat.

Pepperoni Slices: I used a pork pepperoni. Cut the pepperoni slices in half or in quarters, whatever way you like. I measured the whole slices into ½ cup, then cut them.

Pasta or Pizza Sauce: I use a sugar-free pasta sauce. If I don't have any homemade pasta sauce on hand, I will buy this brand. I love that it is sugar-free and much more budget-friendly than other sugar-free sauces.

Canned Biscuits: I use the flaky layers 10 count buttermilk biscuits made by Pillsbury. This particular biscuit has only 15 carbs per serving.

Cheese: I use a 3-cheese blend to mix into the pizza bake. Then I top it with the shredded mozzarella

Casserole Baking Dish: You will need a 9x13 baking dish. I have this dish that has a lid, making it easy to just cover and store in the fridge for those make-ahead days.

Make this Pizza Casserole with Biscuits your way

This Bubble Up Pizza Casserole is a very versatile recipe. You can use any ingredients you would normally put on as a pizza topping. Below are just a few ideas that may suit you.

  • Use ground beef, pork, chicken, or turkey in place of the sausage. You can also sub out chicken sausage links. I love to use the buffalo chicken sausage links.
  • Saute some red and green pepper with the onion and ground meat.
  • Stir in ½ cup of black olives with the pepperoni slices.
  • Substitute turkey pepperoni for the pork pepperoni.
  • Sprinkle the top of the casserole with ½ cup shredded parmesan cheese and ½ cup mozzarella cheese.
  • Substitute 2 cups of cooked penne pasta for the biscuit dough or use Mom's Old Fashioned Buttermilk Biscuits for the dough.
  • Instead of mixing the pepperoni into the sauce mixture, lay it over top of the cheese on the casserole before baking.

  • 1 pound hot Italian sausage

Ingredients
  

  • 1 cup lukewarm water
  • 2 tablespoons unsalted butter melted
  • 2 large large eggs room temperature
  • 3½ cups bread flour
  • ¼ cup sugar
  • 1 teaspoon salt
  • 1 tablespoon instant yeast

Instructions
 

  • In the bowl of a stand mixer with a mixing paddle, add 1 cup of the bread flour, yeast, sugar, and salt. Stir to combine.
  • Add the water to the flour mixture and stir. Stir in the melted butter, 1 whole egg, and 1 egg yolk. reserve the egg white for the egg wash. Mix until combined.
  • Swap out the mixing paddle for a dough hook. Gradually add the remaining flour until soft ball forms. The dough should not be sticky and will pull away from the side of the mixing bowl. Continue to knead the dough until it is soft and smooth.
  • Clean the mixing bowl and lightly coat it with oil or cooking spray. Add the dough to the mixing bowl and cover with plastic wrap. Allow the dough to rise 1-2 hours, or until doubled in size.
  • Punch down the dough and divide the dough into 8 pieces. Roll the dough pieces out into a ball shape then flatten with the palm of your hand.
  • Place the roll on a baking sheet lined with a Silpat or with sheets of parchment paper. Allow the hamburger buns to rise for 1 hour, or until doubled in size.
  • Preheat the oven to 375 degrees. Whisk the remaining egg white until frothy. Brush the burger buns with the egg wash and then sprinkle with the desired topping.
  • Bake the buns for 15 minutes, or until golden brown.

  • Using a 1 tablespoon-sized cookie scoop, scoop the peanut butter mixture and shape into balls. Place on a foil-lined cookie sheet. Once all peanut butter balls have been made, place them in the fridge to chill for 30 minutes.
  • When ready to dip into the chocolate, place the sugar-free chocolate chips in a microwave-safe bowl. Add the coconut oil. Microwave in for 1 minute, in 30-second increments until chocolate is melted.
  • Dip each ball into the chocolate, leaving the top portion of the peanut butter ball uncoated, forming the buckeye. Return to the cookie sheet and repeat until all buckeyes are coated in chocolate.
  • Place the buckeyes back in the fridge to chill until chocolate has hardened. Transfer to an airtight container and store in the fridge or freezer.

Add the seafood, sprinkle with old bay seasoning, and cook for 5 minutes, until seafood is no longer translucent, stirring occasionally. Remove from the skillet and set aside. Wipe skillet clean and use the same skillet to make the sauce.
  • Heat the skillet over medium heat. Add butter and heat until butter is melted and bubbly. Add the green onions and garlic. Cook and stir for 2 minutes.
  • Whisk the flour, salt, pepper, and old bay seasoning together. Stir the flour mixture into the butter mixture in the skillet, until well incorporated. Cook, whisking constantly for one minute.
  • Gradually add the almond milk, half and half, and ½ cup of the reserved seafood broth to the flour mixture. Whisking constantly, until thoroughly combined. Bring to a boil, then reduce heat and simmer until the sauce has thickened.
  • Stir in the 1 cup of shredded mozzarella cheese until combined.
  • Transfer the cooked seafood to the sauce mixture and stir to coat. Remove from heat.
  • Make the ricotta mixture by stirring together the ricotta, mozzarella, parmesan, egg, and parsley. Set aside.
  • Assemble the lasagna in a 9x9 baking dish. Start with a layer of the sauce, two lasagna noodles, ⅓ of the ricotta mixture, and⅓ cup of mozzarella cheese. Repeat layers until assembled.
  • Bake the seafood lasagna in the oven for 1 hour, or until sauce is bubbly and cheese has melted.
  • Remove from oven and cool for 15 minutes before serving.

This Chicken Parmesan Casserole recipe is a combination of homemade pasta sauce, pre-cooked chicken, spaghetti noodles, Parmesan and Mozzarella Cheese. Tossed together and baked in one dish, it will be ready to serve your family in just 30 minutes.

Chicken Parmesan Casserole

This short cut method to Chicken Parmesan Casserole is an easy delicious dinner. Instead of a frying pan, grease spatter and a few different dirty dishes it is all baked in one dish. This Chicken Parmesan Bake can be made ahead of time. Easy to reheat by popping in the oven as soon as you get home.

CHICKEN PARM FOR DINNER

Early in our marriage, I often would make Chicken Parmesan. I would bread seasoned chicken cutlets and fry them in a skillet. Next, I would place them in a casserole dish with a generous amount of parmesan cheese.

When that step was done, I would serve it with a side of spaghetti, also cooked in another dish. Needless to say, a delicious meal, but a lot of steps.

For family dinner night I needed a large volume of food. And, I didn't want to be slaving in the kitchen for an extended period of time. So, I decided to bring the flavors of a chicken parmesan casserole recipe together in one dish.

I made the spaghetti noodles, then drained them. I then mixed all the ingredients for the recipe in the same pot I boiled the spaghetti in. Next, I transferred to the casserole dish for baking. There was minimal mess and a delicious meal.

WHAT YOU NEED TO MAKE CHICKEN PARMESAN CASSEROLE

Pasta: I like the thick spaghetti noodles. For the casserole, I broke them up in quarters before placing them in the hot boiling water. This would make it easier to serve and eat.

Homemade Pasta Sauce: I like to make my own pasta sauce to have on hand. If you don't make yours, any marinara sauce that you like will work here.

Chicken: I used baked chicken breast meat that I bought prepackaged. You can also use rotisserie chicken.

Parmesan Cheese: None of the dried stuff here. I buy a wedge of parm and shred it myself with my box cheese shredder.

Italian Panko or Bread Crumbs to sprinkle on top of the Chicken Parmesan Casserole before baking.

MAKING A KETO VERSION OF THIS CASSEROLE

Finding a way to take regular everyday recipes and making them keto-friendly can be a challenge. Especially when you are feeding a family of diverse diets. Most dinner recipes can be adapted easily to keto.

Zucchini Noodles: This particular veggie noodle releases a lot of water. I don't recommend mixing it together the same as this casserole.

I recommend heating the pasta sauce and chicken in a skillet. Then, serve it over top of the cooked zucchini noodles and sprinkle it with the cheese.

Cauliflower: This versatile veggie would work great in bulking up the casserole. Substitute 4 cups of lightly steamed cauliflower florets for the spaghetti noodles.

Miracle Noodles: I don't recommend this be used the same as pasta in this recipe. If you want to use it, I would assemble the recipe the same as suggested for Zucchini Noodles.

Crushed Pork Rinds: These can take the place of the Panko or Bread Crumbs. Toss with a little Italian seasoning to give the flavoring.

Extra cheese: You can afford a little extra cheese if you are keto and removing the pasta as an ingredient. The pasta is where all the carbs and calories are.

Ingredients
  

  • 8 ounces dried spaghetti
  • 1 15 ounce can diced tomatoes
  • 1 pound roast chicken breast diced
  • 4 cups pasta sauce
  • 1-½ cups shredded parmesan cheese divided
  • ½ cup seasoned bread crumbs

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large stockpot, cook the spaghetti according to the package. Drain in a colander.
  • Return the pasta to the stockpot and add the diced tomatoes with their juices, diced chicken, and pasta sauce. Toss to coat.
  • Sprinkle with ¾ cup of parmesan cheese and stir to combine.
  • Transfer chicken mixture to a 9x13 baking dish. Top with remaining parmesan cheese and bread crumbs. Bake for 20 minutes, or until casserole is hot and cheese is lightly browned.

  • Chicken: Feel free to cook your own chicken for this recipe. I used precooked chicken for convenience. Rotisserie chicken also works well here.

Butter: I used unsalted butter. Melted coconut oil would be a good substitute if you cannot eat dairy.

Sugar-Free Chocolate Chips: I used dark chocolate in the cookie dough and mint white chocolate chips stirred into the cookie itself.

Mint Extract: This is added to the cookie dough to boost the mint flavor.

Almond Flour: Use a finely ground almond flour. I highly recommend this one.

Powdered Sweetener: I went with this powdered sweetener because I feel it has the best texture in the cookie.

Cocoa Powder: I used regular cocoa powder, however, dark or dutch cocoa can be used also.

🔪 Instructions

  • Preheat the oven to 350 degrees. In a microwave safe medium bowl, melt the butter and chocolate chips in 30 second intervals. Stirring between each interval until smooth. Set aside.
  • In a large bowl, whisk the eggs until well blended. Whisk in the melted butter and chocolate mixture until smooth and creamy.
  • Add the powdered sweetener, almond flour, cocoa powder, and baking powder. Stir until no dry parts remain. Stir in the mint chocolate chips.
  • Using a tablespoon sized cookie scoop, measure dough portions onto parchment paper lined cookie sheet. Flatten the cookie lightly a silicone spatula lightly coated with cooking spray.
  • Bake the cookies for 7 minutes, or until cookies are just browned around the edges. Remove from the oven and cool completely on the baking sheet before transferring to an air tight container.

Baking Sheet: Use a baking sheet that will fit a dozen cookies on it comfortably.

Parchment Paper: I always use parchment paper when baking cakes and cookies. It helps prevent the cookies from sticking to the baking sheet.

Store cookies in an airtight container in the fridge up to 1 week and in the freezer up to 3 months.

📖 Variations

  • Substitute 3 tablespoons of all-natural peanut butter for the 3 tablespoons of chocolate chips that are melted with the butter.
  • Substitute vanilla extract for the peppermint extract.
  • Add 2 tablespoons finely chopped walnuts to the cookie dough.
  • Use vanilla extract and milk chocolate chips and add 1 teaspoon ground cinnamon to the almond flour mixture.
  • Stir in 1 teaspoon espresso powder with the dry ingredients.
  • Substitute ⅓ cup of crushed sugar free hard peppermint candies for the mint chocolate chips.

💭 Tips

  • Instead of transferring cookies from the baking sheet to a cooling rack, allow the cookies to cool completely on the baking sheet. Trying to move the cookies while hot may cause them to fall apart due to the nature of their ingredients.
  • This recipe can easily be adapted for a regular diet also by using powdered sugar and regular chocolate chips. Making this a grain-free recipe still, but not necessarily sugar-free. Whichever way you prefer, or need to make the recipe, it will work either way.

  • Pour the cake batter into the baking dish. Bake for 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool for 10 minutes
  • Poke holes over the surface of the cake using a straw. Pour all but ¼ cup of the condensed milk over the warm cake and spread over the top, covering it completely. Refrigerate until cold.
  • In a large mixing bowl, add the ricotta and mascarpone cheese, and beat until smooth.
  • Add the remaining ¼ cup of condensed milk, powdered monkfruit, and vanilla. Beat until thoroughly combined.
  • Spread the ricotta filling over top of the cake. Sprinkle with sugar free chocolate chips and refrigerate.

Ingredients
  

FOR THE CASSEROLE

  • 1½ pound ground beef
  • ½ cup diced onion
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons coconut aminos
  • 2 tablespoons dill pickle relish
  • 2 ounces cream cheese
  • 4 large eggs
  • ½ cup heavy cream
  • 1½ cups shredded cheddar cheese
  • 1 tablespoon sesame seeds optional

FOR THE MAC SAUCE

  • ¼ cup Mayonnaise
  • ¼ cup Sugar-free ketchup
  • 2 tablespoons Dill Pickle Relish
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Smoked Paprika

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large skillet over medium heat, cook the ground beef until it begins to brown. Stir in the onion, garlic powder, and salt and cook for 7 minutes, or until beef has browned and onion has softened.
  • Stir in the coconut aminos and cream cheese until incorporated. Turn off the heat and set aside.
  • Spray a 9x13 casserole dish with cooking spray. Spread the beef mixture in the bottom of the casserole dish.
  • In a small mixing bowl, whisk together the eggs and heavy cream. Pour the heavy cream mixture over the meat mixture evenly.
  • Sprinkle the Big Mac Casserole with the shredded cheese and place in the oven to bake for 20 minutes.
  • Remove the casserole from the oven and sprinkle with sesame seeds (if using). Return the casserole to the oven and bake for 10 minutes or until the cheese is melted and casserole is cooked through.
  • While the casserole is baking, make the Big Mac Sauce. Mix the mayonnaise, ketchup, pickle relish, garlic powder, and smoked paprika together until combined. Store in the refrigerator until ready to serve.
