    Cabbage Noodles with Bacon

    Cabbage Noodles with Bacon are a great side dish recipe. Also known as Haluski, This recipe can be enjoyed with egg noodles tossed in, or for a low-carb version, Shirataki noodles can be substituted. This is a winner recipe full of caramelized flavor the entire family will love!

    This cabbage recipe goes great with any protein! I love to serve it with Firemen's Field Day Chicken Barbecue or Grilled Pork Chops with Chipotle Sauce. Or, add some Kielbasa to the cabbage noodles for a great stand alone recipe!

    Converting Cabbage Noodles to a low-carb recipe

    Whenever I have a craving for Cabbage Noodles this side dish recipe is what comes to mind. I would make this recipe often in our pre-keto days. Pasta was a favorite in our home, no matter how it was made.

    Since we started the Keto Diet, I wanted to still enjoy this cabbage noodles recipe. So, I came back, made a few changes by adding some bacon for fat and flavor, and substituted the pasta with Shirataki Noodles.

    What are Shirataki Noodles

    Shirataki Noodles are a tofu product that is shaped in the form of a noodle. While we do not mind them at all, others do find them to have a texture and odor that is not pleasant. You will have to decide for yourself if it is a product you would like.

    Grumpy and I don't have any issues with this product. Yes, there is an odor, but I only notice it when I have the noodles in a bowl by themself. Not once has Grumpy ever indicated to me he smelled a bad odor from the noodles in the food I have served him. Once added to food, I no longer notice it. And, the noodles do have a toothsome texture that is a little different from pasta. But again, this does not seem to bother these two pasta loving fools!

    How I came to make the original recipe

    When I first wrote this post I was living near Potsdam, NY area and working at Clarkson University. I had several friends that would rave about a cabbage noodles dish they would eat at a local restaurant. Because we tended to not drive to Norfolk to eat dinner out, I decided to just make the recipe on my own!

    Sabad's is the name of the restaurant my friends used to get their cabbage noodles from. When I looked their menu up online, at first, I wasn't able to find it on the menu! After more searching, I noticed that it was a staple side dish served with all dinners. According to my friends, it was made with cabbages, carrots, onions, and butter. So, with that information, I went on to make this recipe!

    Adjustments I made to this Cabbage Noodles Recipe

    • I added 2 strips of bacon to the recipe.
    • I used the bacon fat for sauteing the vegetables instead of 1 tablespoon of olive oil
    • Shirataki Noodles were substituted for Egg Noodles.
    • If you would like to eliminate more carbohydrates from this recipe, you can remove all noodles and reduce the amount of carrots and onions in the ingredients.

    Ingredients
      

    • 8 cups cabbage thinly sliced
    • ½ cup carrots coin slices
    • ½ cup onion diced
    • 2 slices bacon
    • 1 tablespoon butter
    • 6 oz package wide egg noodles cooked according to package directions OR 8 oz package Shirataki Noodles, fettuccini style
    • 1 tablespoon butter
    • ½ teaspoon ground pepper
    • 1 teaspoon salt

    Instructions
     

    • Cook noodles according to package directions.  Drain water from pasta and toss with 1 tablespoon butter. (this applies to either type of noodle).
    • in a large frying pan over medium high heat, cook bacon until crisp. Remove bacon from pan and set aside, leaving the bacon fat in frying pan.
    • Saute carrots and onion in bacon fat until they start to soften (about 3 minutes). 
    • Add chopped cabbage, salt and pepper and stir fry until cabbage is crisp tender and has a little caramelization.
    • Toss buttered noodles with cabbage mixture, season with salt and pepper, and serve!
