    This Cauliflower Fried Rice recipe is simple, healthy, and low carb recipe that makes the perfect keto side dish. It is made with coarsely chopped cauliflower and sauteed with onions and carrots and tossed with lime juice and zest at the end of cooking.

    Low Carb Vegetarian Side

    When I made this Cauliflower Fried Rice I knew I wanted to make it with the addition of lime and cilantro. That flavor combinations has been a favorite of mine for many years now. I also was thinking about the cilantro rice you can get at Chipotle and how much I loved it, but rice is not a big part of my diet anymore.

    After I had cauliflower rice for the first time, I knew I would be making it again. It was far easier than I had anticipated and it literally felt like rice in my mouth!

    🥘 Ingredients

    Cauliflower (1 head), I like to buy the head of cauliflower, but 4 cups of pre-riced cauliflower can be substituted.

    Onion, carrot, and garlic cloves for flavor.

    Olive Oil, to "fry the rice."

    Lime Juice and lime zest for flavor.

    Cilantro, optional but adds great flavor if you are a cilantro fan!

    Large Stainless Steel Skillet

    Wooden turner (to toss and stir the cauliflower rice)

    Zester, I love this microplane zester!

    Juicer, I like to use a wooden citrus reamer and strain the juice through a small sieve to separate the seeds and pulp from the juice.

    🔪 Instructions

    • Heat the olive oil in a large skillet over medium high heat. Add the onion and carrot. Cook and stir for 3 minutes, or until the onion begins to turn translucent.
    • Add the cauliflower rice and stir. Cover and cook for 5 minutes without stirring. Remove cover and stir. Continue to cook uncovered for 5 minutes, or until the cauliflower is tender and has lightly browned.
    • Stir in the lime juice, cilantro, and lime zest.

    💭 Top Tips

    • Pre cut cauliflower rice can be bought in place of the head of cauliflower. You will need 4 cups of pre riced cauliflower.
    • To make cauliflower rice, I feel the best method is to roughly hand chop it. The pieces of cauliflower should not be as small as actual rice. There needs to be some substance to it.
    • Dice the carrot into small pieces to allow it to cook evenly along with the rice.

    📖 Variations

    • Leave out the lime and cilantro and Add 2 scrambled eggs to the cauliflower rice. Sprinkle with 1 tablespoon of coconut aminos and stir in ¼ cup of sliced scallions.
    • Stir in ½ cup of frozen peas in step two for added color.
    • Pescatarians can add ½ lb of precooked chopped shrimp for added protein.

    Ingredients
      

    • 1 head cauliflower , chopped into rice sized pieces
    • ½ small onion  , diced
    • 1 small carrot , diced
    • 2 cloves garlic  , minced
    • 2 tablespoons olive oil
    • ¼ cup cilantro , chopped
    • 1 tablespoon lime juice
    • 1 teaspoon lime zest
    • 1 teaspoon salt
    • ½ teaspoon black pepper

    Instructions
