    This Turkey Bacon Breakfast Burrito is chock full of bacon, eggs, cheese, and tomatoes. This is a great portable breakfast for those who like to take their breakfast on the go!

    If you are like me, then you either don't have the time to eat breakfast before you head out the door in the morning, or you just aren't ready to eat it yet. That is where these Turkey Bacon Breakfast Burritos come in handy! Made with my Homemade Flour Tortilla, these are a sturdy and delicious breakfast wrap the whole family will love.

    Turkey Bacon Breakfast Burrito: A grab and go breakfast

    I first made this recipe back in the day when I was working outside of the home. I have never been a person who could eat as soon as I got up in the morning and never am ready to eat before 8:30 or 9 am and need to be awake several hours before I am ready to eat.

    These Turkey Bacon Breakfast Burritos are so easy to make and can be made ahead of time and frozen for convenience. I like to individually wrap each burrito then place them all in a big container in the freezer. I just pull one out and take it with me to reheat when I get to the office.

    What you need to make these breakfast burritos

    Flour Tortillas: I highly recommend making your own homemade flour tortillas. Personally, they are the best! I am assuming if you're reading my website, that you already don't mind cooking. So, definitely give them a whirl. I promise you will never want to buy pre-made tortillas again.

    Bacon: I went with turkey bacon because it tends to work better in a sandwich that will be eaten later. Regular bacon is great if you will eat this as soon as you make it. I like my regular bacon very crisp and it won't stay crisp in a wet sandwich that won't be eaten asap.

    Cheese: your favorite cheese works here. Cheddar and Colby are two that we use often. I also buy the yellow cheese for color but any cheese will work.

    How to fold a breakfast burrito

    There really is no right or wrong way to fold a breakfast burrito. However, when I make these, I like to seal them up tight.

    I place the filling, in a line, at the bottom half of the burrito. This should be the side that is closest to your body before rolling. Start by folding each side over to partially cover the filling. Next, take the tortilla and roll up tight, in a motion moving away from your body. Be sure to tuck in ends that may try to pop back out when rolling.

    Storing Turkey Bacon Breakfast Burritos

    I like to make these on a Sunday morning and will make enough of them to freeze for a convenient grab and go breakfast during the work week. It makes my life easier to take one out and heat it up for Grumpy to eat on his commute to work.

    Once I have these Turkey Bacon Breakfast Burritos assembled, I allow them to cool completely. Then, I will wrap them in aluminum foil and place them in a reuseable plastic freezer storage bag.

    How to reheat these breakfast wraps

    In the oven: Preheat the oven to 350 degrees. Place the foil wrapped breakfast burrito in the oven and bake for 8 minutes, or until heated through.

    In the microwave: Remove the turkey bacon breakfast burrito from the foil and wrap it in a paper towel. Microwave for 1-2 minutes depending on your microwave wattage, or until heated through.

    How to serve Turkey Bacon Breakfast Burritos

    While these Turkey Bacon Breakfast Burritos are delicious as made, there are a few extra things I may add to the burrito to boost the flavor even more!

    Homemade Salsa is the absolute perfect addition to any burrito.

    For extra cheesy Turkey Bacon Breakfast Burritos, make a quick and easy cheese sauce. Just melt ½ cup of your favorite cheese with 1 tablespoon of milk in the microwave for 1 minute, or until smooth when stirred. Once the burrito has been reheated, open it up and drizzle a tablespoon of cheese sauce inside.

    Make these Breakfast Burritos your way

    Now that you have the basics for making this Turkey Bacon Breakfast Burrito, you can easily adapt the recipe to fit your needs!

    If you have a vegetarian or vegan family member, try using Mom's Scrambled Tofu as a filling instead of the scrambled eggs and bacon.

    Fry some pork sausage crumbles or some vegetarian sausage crumbles to add to the eggs instead of the bacon.

    Ingredients
      

    • 2 eggs large
    • 1 teaspoon olive oil
    • 1 green onion diced
    • 1 ounce cheddar cheese shredded
    • 1 tablespoon cilantro chopped
    • 1 tablespoon tomato diced
    • 1 tablespoon tomatillo or regular salsa
    • 3 slices pre cooked turkey bacon chopped
    • 2 flour tortillas

    Instructions
     

    • In small skillet, saute onion for 1 minute, or until soft.
    • Add the eggs and scramble for 2 minutes, or until no longer wet.
    • Add cheese, salsa, cilantro, and bacon to egg mixture.
    • Divide up mixture between two tortillas that have been warmed in the microwave. Roll and eat or store in container until ready to re-warm and eat!
