These Garlic Chive Mashed Potatoes are creamy, fluffy, and full of buttery, garlic flavor with a fresh chive finish. Made with Yukon Gold potatoes and a surprise ingredient, they're the perfect side for any meatloaf, chicken, steak, or pork dinner.

I got the inspiration for this recipe from a combination of my Mayonnaise Mashed Potatoes and my Garlic Mashed Cauliflower recipes here on my website. I added mayo to the mix of this and cooked the potatoes with whole garlic cloves. This turned into a wonderful side dish with delicious flavors.

Garlic Chive Mashed Potatoes
Equipment
- Sharp knive
- Wooden spoon

Ingredients
- 2 pounds potatoes
- ½ tablespoon salt
- 6 cloves garlic
- ½ cup mayonnaise
- ¼ cup half and half
- 2 tablespoons fresh chives chopped
Instructions
- Remove skins from potatoes. Rinse well with water, cut into smaller chunks, and add to a large pot.
- Remove skins from garlic cloves and add to the potatoes.
- Sprinkle potatoes and garlic with ½ tablespoon of salt. Cover with water until potatoes are just covered.
- Set the pot on the cooktop and bring it to a boil and cook for 15-20 minutes, or until you can easily pierce the potato with a fork.
- Drain water.
- Add the mayonnaise and half and half to the potatoes and using a hand masher, mash the potatoes until at your desired consistency.
- Stir in chopped chives and serve as desired.
