Hard boiled Large eggs
Fresh chives
Mustard: I have used sweet and spicy mustard and dijon mustard.
Black pepper
Red pepper
Pre-cooked shrimp: I like to use a medium or small shrimp
Crispy cooked bacon
Green onions
🔪 Instructions
- Cut hard boiled eggs in half lengthwise and remove egg yolks, placing egg yolks in a medium bowl and egg white halves on a egg plate. Set egg whites aside.
- Mash yolks using a fork, until yolks are fine crumbles. Add mayonnaise, shrimp and chives to mashed yolks.
- Using a tablespoon, fill egg white halves with approximately 1 tablespoon of egg yolk mixture.
- Sprinkle the tops of the deviled eggs with bacon pieces and a little more chive if desired.

Refrigerate: store leftover eggs in an airtight container in the fridge up to 3 days.
📖 Deviled Egg Variations
Cajun Shrimp Deviled Eggs: add a few dashes of cajun seasoning or hot sauce to the egg yolk mixture.
Old Bay Shrimp Deviled Eggs: add a teaspoon of old bay seasoning to the egg yolk mixture.
Seafood substitution: substitute imitation crabmeat for the cooked shrimp.
💭 Tips
- Add more flavor and cook raw shrimp and in a skillet with hot oil and a sprinkle of old bay seasoning until shrimp are pink. Allow shrimp to cool completely before adding to egg yolk mixture.
- For perfect hard-boiled eggs, place the eggs in cold water, bring to a hard boil, then turn the burner off and cover the pot. Set a time for 15 minutes, transfer eggs to a bowl of ice water to cool quickly. The egg yolks will be beautifully yellow with no green tint around the outside of the yolk.
- Add a fresher flavor and light the deviled egg recipe up the recipe by substituting sour cream or greek yogurt for the mayonnaise.
- If using a piping bag to fill the egg white halves, be sure to cut a hole large enough for the pieces of shrimp to pass through easily.
