Easy recipe:this is an easy dessert salad that only requires you to mix and refrigerate recipe, easy peasy!

Keto fat bomb: this keto dessert is a great recipe that satisfies the sweet tooth and will boost fat and fiber in the diet.

Simple ingredients: this recipe is made with basic ingredients that are low carb and healthier options.

    Measuring cup full of strawberries.

    🥘 Ingredients

As an Amazon Associate I earn from qualifying purchases.

Unsweetened almond milk: be sure to choose the unsweetened plain almond milk.

White chia seeds: this thickens the salad and adds texture (similar to what the mini marshmallows do in a traditional fluff salad).

    Fresh Strawberries

Sugar free syrup: adds sweetness to the salad.

    Heavy cream

Sliced berries in bowl being chopped by hand with biscuit cutter.

    🔪 Instructions

Just a few simple steps and overnight refrigeration and you will have a delicious strawberry fluff recipe to enjoy when the mood strikes!

    For the salad:

    1. In large mixing bowl, combine almond milk, white chia seeds, and 2 tablespoons of Jordan's Skinny Syrup. Stir well to combine, making sure there are no clumps of chia seeds.
    2. Chop strawberries with 1 tablespoon of Jordan's Skinny Syrup. Add to chia mixture and stir to combine.
    3. Cover bowl with lid or plastic wrap and place chia mixture in in refrigerator to sit overnight (or at least 8 hours).

    To serve:

    1. After pudding has set, make heavy whipped cream. Add the heavy cream to a mixing bowl with 2 tablespoons Jordan's Skinny Syrup. Whip until stiff peaks form.
    2. Fold heavy cream into chia pudding.
    3. Divide mixture between 6 individual serving sized jars.
    4. Place ½ strawberry on top of each salad serving.
    5. Cover and refrigerate for until ready to serve.
Chia seed in tablespoon being poured into liquid.

    🥄 Equipment

Large bowl with an airtight lid.

    Small bowl

    Food chopper

    Measuring cups

    🥫Storage

Refrigerate: store leftover salad in an airtight container up to 5 days.

Adding chopped strawberries to fat bomb recipe.

    📖 Variations

    • Substitute blueberries, raspberries or fresh mandarin oranges for all or part of the strawberries.
    • Slowly add the chia seeds to the liquid ingredients and stir constantly. Once salad is assembled, stir occasionally to prevent clumps.
    • For best results choose large bright red, ripe fruit to get maximum sweetness.
    • For a more intense strawberry flavor, use a sugar free strawberry syrup.
Placing lid on mixing bowl with chia and strawberry mixture in bowl.

    💭 Tips

    • While it takes only 10 minutes to mix the salad, you will need to let it sit at least 8 hours, or overnight. You will then need about another 10 minutes to whip your cream and fold into the salad in the final step.
    • Measure or weigh your strawberries. I used 1 cup of whole strawberries which weighed in at 5.5 ounces.
    • Slice the strawberries and place them in a shallow bowl with 1 tablespoon of syrup and allow them to macerate for a few minutes. Chop with hand chopper to liquefy and mash berries.
    • Place a lid or plastic wrap over the top of chia pudding mixture in mixing bowl and place in refrigerator up to 8 hours.
    • Add the whipped cream to the chia pudding and fold to combine well. The salad mixture will be very light and fluffy.
    • Add to serving jars and refrigerate until ready to consume this delicious fat bomb recipe!.

    🙋 FAQ's

    What are Chia Seeds?

Chia is an edible seed that comes from a flowering plant. They can be black or white, and will absorb up to 12 times their weight in liquid. After they have soaked in liquid, they will form a gel-like substance around the seed. This makes them perfect for thickening jams and puddings.

Are Chia Seeds good for Keto?

When eating low carb, your diet may lack in fiber. So this miracle seed is a perfect solution due to its high fiber and fat content. Just  1 serving of chia is 11 grams of fiber and 9 grams of fat!

Are Chia Seeds high in Calories?

Chia Seeds have 137 calories per two tablespoons. However, for the most part, calories on Keto do not count. When eating a high-fat low carb diet, you tend to feel less hungry and have fewer cravings. Therefore, you tend to eat less.

Do I need to limit the amount of Chia Seeds in my diet?

I highly recommend you don't consume a large quantity of chia in any one day. Due to their high fiber content, they may cause digestive issues.

What could I use n the place of the heavy cream? I can't use dairy. Something that will whip up like the heavy cream.

Hi Faye, You could try coconut cream. I haven't done so but I think that would be the most stable item to make it with. Since you've asked this question, I will definitely try to find a non-dairy version and update the post as soon as I do! Thank you for stopping by!
