    This Zucchini Bake Recipe is made with sliced zucchini, mushrooms, and onions. It is an easy side dish for your evening meal. this low carb zucchini recipe is also keto-friendly and one of the easiest recipes you can make for your dinner table.

    Zucchini Bake Recipe

    Side dish recipes can sometimes be hard to come up with. For the most part, they are veggies, and oftentimes, if you are feeding picky eaters like I am, you may wonder why bother with a veggie side dish at all. However, this Zucchini Bake turned out delicious and my picky eater did not complain.

    When Zucchini is overflowing

    When Zucchini is in season, there is no end of the need for recipes to make with it. You either love zucchini or hate it. There can be too much zucchini in your garden that your scrambling for recipes to make. Some of our favorite zucchini recipes are Chocolate Zucchini Cake, Chocolate Zucchini Bread, or if your low carb, these Low Carb Zucchini Biscuits or Cashew Breaded Zucchini Chips.

    I have been in both positions. When you don't have a garden of your own, unless you have friendly neighbors who share, then your bound to have to buy what you eat. You know the joke about your neighbor sneaking zucchini onto the back porch? Well, there were a few years I wish I had a neighbor who would do just that!

    I'm pretty spoiled. I grew up with gardens and always had it available to me. So, I always was looking for ways to eat it so we weren't wasting it. That is how this Zucchini Bake recipe came into the picture.

    What you need to make this recipe

    This is a very simple recipe. It is easy to make and easy to eat! There are minimal ingredients and little effort needed to put forth to make this zucchini bake.

    Zucchini: fresh is best. Zucchini is almost always available in the grocery store year-round. However, if its summer, and you have a garden full like I do, then you will be happy to have found this recipe!

    Mushrooms: I always buy baby portobellos, presliced. Cremini mushrooms will work well also.

    Onions: I used white, but red onion will work also.

    Olive Oil: I always use extra virgin olive oil.

    Cheddar Cheese: The brick is your best bet. Then shred it yourself. I don't like pre-shredded cheese because it has a starch coating that you won't get with a brick.

    1 quart casserole dish: This is my favorite one. Ceramic or glass baking dishes work best.

    Ways to make this Zucchini Bake Recipe your own

    When it comes to fresh veggies, the sky can be the limit. Just chop or slice any of the veggies below and add it to, or swap it out for another. Just be sure to keep it low carb if your following keto.

    • Asparagus
    • Yellow squash (aka crookneck)
    • Green beans
    • Tomatoes
    • Radishes
    • Cauliflower
    • Broccoli
    • Cabbage

    Cheese is another way to change the flavor profile of this Zucchini Bake. Below are some cheesy ideas (pun intended). Just swap out any one or more for the cheddar cheese.

    • Mozzarella
    • Pepper Jack
    • Havarti
    • Parmesan cheese (the fresh kind, not the grated)
    • Asiago
    • Monterey Jack

    Low carb recipes to serve with this side dish

    When making this zucchini bake recipe, it is probably best to keep everything simple. When I originally started making this dish, it was because I was dead tired and didn't feel much like doing anything, much less cook!

    Low Carb Main Dish Pairings

    This Air Fryer Roast Beef is the perfect protein to serve with this zucchini bake. It is ready in just over an hour and you don't have to worry about anything, other than letting the air fryer do its job. It's low carb and keto so it keeps you on that track also if you are following it.

    If you love grilled chicken, then this Fireman's Field Day Grilled Chicken is another easy recipe to make. It also goes great with the zucchini bake.

    Crispy chicken is always welcome and these Air Fryer Chicken Wings are extra crispy with a buffalo sauce coating. They are perfect main to this veggie side dish.

    Ingredients
      

    • 1 zucchini sliced (about 2 cups)
    • 1 tablespoon olive oil
    • 1 8 ounce package sliced mushrooms
    • 1 small onion
    • 3 cloves garlic sliced
    • ½ cup shredded white cheddar cheese
    • ½ teaspoon basil

    Instructions
     

    • Preheat the oven to 350 degrees.
    • Add the zucchini, mushrooms, onion, and garlic to a large mixing bowl.
    • Drizzle with the olive oil and sprinkle with Italian seasoning, then toss to coat. Transfer the zucchini mixture to a large casserole baking dish.
    • Cover with aluminum foil and bake at 350° for 20 minutes.
    • Uncover the zucchini bake and sprinkle with the cheese. Bake uncovered for 10 minutes or until vegetables are tender.
