    These Air fryer egg rolls a vegan recipe and a healthier way to enjoy this delicious recipe. There is less fat than the deep-fried version and the wrapper is still a crispy, golden brown and delicious served with a side of sweet chili dipping sauce. They are the perfect appetizer for your next party!

    Egg Roll Wrappers: I like to use this eggless egg roll wrapper. 

    Green Cabbage

    Carrots 

    Green Bell Pepper

    Coconut Aminos: I prefer this over soy sauce, it has a sweeter flavor with less salt.

    Cinnamon

    Fennel seed

    Cayenne Pepper

    Oil Spray - This is my favorite oil spray pump.

    🔪 Instructions

    1. Heat the oil in a large skillet over medium-high heat until hot. Add the green onions, garlic, and ginger. Saute for 2 minutes, turning heat down to medium if needed, until vegetables begin to soften. 
    2. Stir in the carrots and cook over medium heat for 1 minute more. Add the cabbage and toss to combine. Cook the cabbage mixture for 7 minutes, or until the cabbage has wilted, stirring occasionally.
    3. Add the coconut aminos, cinnamon, fennel seeds, salt, black pepper, and cayenne pepper (if using). Remove from heat and cool 10 minutes.
    4. Assemble the egg roll by placing 2 tablespoons of egg roll filling near the bottom corner of the egg roll wrapper.
    5. Fold each side of the egg roll wrapper towards the center of the egg roll, covering the filling. Continue to fold and roll the egg roll away from you to form the a log shape.
    6. Place the rolled egg rolls seam side down in the air fryer basket or tray in a single layer and spray with a light spritz of cooking spray on the outside of the egg roll..
    7. Air fry at 350 for 15 minutes, turning halfway thru, until golden. 

    🥄 Equipment

    Air Fryer to cook the egg rolls.

    Silicone Pastry Brush to dampen the edges of the egg roll wrappers.

    🥫Storage

    Refrigerate: store leftovers in an air-tight container  in the fridge up to 3 days.

    Freeze: store in a freezer safe container up to 3 months. 

    Reheat: warm frozen egg rolls  in the air fryer and cook at 350 for 5 minutes, or until warmed through

    📖 Variations

    • Substitute ½ tablespoon 5 spice powder for the cinnamon, fennel, and cayenne powder
    • Brush the egg rolls lightly with sesame oil instead of cooking spray for a more nutty flavor to the roll.
    • Add a little more color to the filling and substitute 2 cups of the shredded green cabbage for shredded red cabbage.
    • Add 1 cup chopped mushrooms (raw) to the onion mixture in step 1.
    • Add cooked ground pork or ground chicken to the cabbage mixture for added protein.

    💭 Tips

    • Save time and buy pre shredded coleslaw mix in place of cabbage and carrots. 
    • Instead of cooking spray, use a pastry brush and lightly brush the egg roll wrappers with olive oil, toasted sesame oil, or with a beaten egg. This aids in browning and crisping up the egg roll wrapper.

    Make sure to leave space between the egg rolls to allow hot air to circulate around them.

    Are spring roll wrappers and egg roll wrappers the same?

    No, spring rolls are generally made with rice wrappers where egg rolls are made of a thicker flour wrapper.

    Are all egg roll wrappers vegan?

    No, you will want to check the package to see if it is vegan. Some egg roll wrappers are dipped in egg for richness.

    Can you bake air fryer egg rolls instead?

    Yes, just place egg rolls on a parchment lined baking sheet and lightly coat with nonstick cooking spray. Bake at 350 for 30 minutes, turning egg rolls over halfway through.

    I wasn't sure how the air fryer would work for crisping up the egg rolls. However, it turned out to be an excellent way to make these egg rolls without the mess of oil in deep fryer. While they aren't exactly like deep fried egg rolls, they make a great replacement for those wanting to eliminate deep-fried foods.

    Air Fried Egg Rolls will get golden brown and crispy,. They will stay that way while they are hot, but, as they cool down, the steam from the cabbage mixture will soften the egg roll wrapper. However, once reheated, they will crisp up again, though not as crispy as they were when first air fried.

    • 8 cups shredded cabbage
    • 2 small carrots , shredded
    • ½ green pepper , finely diced
    • 1 tablespoons extra virgin olive oil
    • 1 tablespoon sesame oil
    • ¼ cup coconut aminos

    • 1 teaspoon fresh grated ginger

    • 2 cloves garlic
    • 2 green onions , white and green parts
    • ½ teaspoon cinnamon
    • ¼ teaspoon fennel seeds
    • ¼ teaspoon cayenne pepper
    • 16 7" square egg roll wrappers
    • Olive Oil Pump Spray

    Instructions

    Oven Baked Egg Rolls

    Bake egg rolls in the oven instead of using the air fryer. Place prepared egg rolls on a parchment lined baking sheet and lightly coat with nonstick cooking spray. Bake at 375 degrees for 30 minutes, turning egg rolls over halfway through.
