Crustless Spinach Quiche

Ingredients
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon nutmeg
- 1½ cups milk
- 2 large eggs , beaten
- ½ cup finely chopped onion
- 8 ounces sharp white shredded cheese
- 12 ounces frozen spinach , thawed and drained
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl, whisk together the flour, salt, nutmeg, and baking powder. Set aside.
- In another large bowl, whisk together the milk, eggs, and onion.
- Using a wooden mixing spoon, add the egg mixture to the flour mixture, stirring until flour is combined.
- Stir in the cheese and spinach.
- Pour the spinach and cheese mixture into a 9″ pie plate or quiche dish sprayed with cooking spray.
- Bake the spinach quiche for 45 minutes or until a knife comes out clean when inserted.
