    Summer Cocktails: this fruity take on the classic mojito cocktail is a great addition to your summertime line up of adult drinks to enjoy by the pool or patio nights!

    Simple ingredients: made with fresh, simple ingredients, this 

    Make ahead: this is a drink recipe that can be made ahead in a large batch and kept in the fridge until you are ready to serve.

    White rum, watermelon chunks, fresh mint, fresh limes, and granulated sugar.

    🥘 Ingredients

    Ripe watermelon: look for a good watermelon that has a little bit of yellow! This will guarantee a ripe, juicy watermelon.

    White rum: use your favorite brand. I prefer Captain Morgan's white rum. 

    Fresh mint sprig: the mint is where it's at in this drink, so be sure to use fresh, bright green leaves that have not turned brown anywhere.

    ​Fresh Lime Juice: buy plump juicy limes that will give slightly when gently squeezed.

    Granulated sugar: the sugar has two purposes, to sweeten the drink and to aid in releasing the oil from the mint leaves giving it that mint flavor we all love.

    I use my nutri bullet which works perfectly, but you can also use a blender, food processor, or juicer.

    🔪 Instructions

    1. Using blender, blend watermelon chunks into a puree. Strain juice over a large pitcher to remove any pulp from the juice.
    2. Pour the rum into the pitcher with the watermelon juice.
    3. Place the mint leaves in a large cup and add the granulated sugar. Using a wooden muddler, muddle the leaves and sugar together, crushing the mint to release the mint flavor. 
    4. Squeeze lime juice over the sugar/mint mixture and stir to combine and dissolve the sugar.  
    5. Pour mint mixture into large pitcher with watermelon juice and rum. Cover and stir well. 
    6. Refrigerate until ready to serve.
    7. To serve, Pour into glass filled halfway with ice.  Garnish with a fresh mint sprig or a chunk of watermelon if desired.

    Strain the blended watermelon using a fine mesh strainer and discard the pulp.

    🥄 Equipment

    Large pitcher

    Blender or food processor: this is used to make the watermelon puree 

    Muddler: to muddle the mint and sugar together and release the mint flavor from the leaves.

    Mesh strainer: to strain the blended watermelon and remove any extra pulp from the juice.

    🥫Storage

    Refrigerate: Store in an airtight container in the fridge up to 5 days.

    It's important to muddle the mint leaves, sugar, and lime juice together to extract the mint flavor.

    📖 Variations

    • Substitute fresh pineapple juice for the watermelon juice.
    • Add a splash of club soda or ginger ale to the mojito before serving.
    • Blend the mojito mixture with ice for a blended watermelon mojito.
    • Substitute coconut rum for the white rum.

    💭 Tips

    • If you want to use a simple syrup instead of crushing mint and sugar together, I highly recommend this mojito mint syrup.
    • The back of a wooden spoon can be used to muddle the mint and sugar if you don't have a muddler.
    • Make a virgin mojito for the kids, Just omit the rum from from the recipe and adjust the lime juice to taste. You may need more lime juice than you would for this non-alcoholic drink.

    Yes, white rum is also called light rum or silver rum.
