A few years ago Grumpy and I were on this huge "Mojito" kick. We still think about those Frosty Cool Peach Mojitos but I just haven't taken the time to make them. I gave my juice to Christopher so I felt I didn't have a good way to get the fresh peach puree. Chris uses the juicer far often than I did and he used it recently when we were visiting to make fresh juice for us. It was a great investment for me, but Christopher gets the best use out of it in my opinion.
I now own a food processor and I use that much more often! I used the food processor to puree the watermelon in this yummy Watermelon Mojito. I really loved the fresh flavor of this drink and I could have drank 10 of these. I probably wouldn't have been able to write this post however if I had....not today anyway!
It was pretty easy to make the watermelon juice. You will puree the watermelon chunks in the blender or food processor really well then strain the juice thru a fine sieve. I got about 4 cups of juice from ½ of a small watermelon (seedless) after all was said and done. What you don't use in the drink can easily be stored in the refrigerator, but I'm pretty sure you won't have any juice left by the end of the day. 😉
I will be sharing with you a recipe for just 1 drink because when I do make a drink, usually it's just for 1 person at a time. If you're enjoying a beautiful day and want a cool, refreshing, not too sweet drink to sit back and relax with, then I totally recommend making this drink. You don't have to use the rum if you would rather not have the alcohol and have kids you want to serve this to.

Frosty Cool Peach Mojito
Mojitos
Mango Peach Mojito
- 6-7 mint leaves
- 1 tablespoon granulated sugar
- juice of ½ lime
- 2 full shot glasses of white rum
- 4 full shot glasses of watermelon juice
- Place mint leaves and sugar in shaker. Muddle the mint and sugar together to release the oils in the mint leaves. Squeeze lime juice over the sugar/mint mixture. Pour in rum and watermelon juice and add a scoop of ice. Cover and shake well.Pour into tall glass (making sure to use the strainer on the shaker) and add new ice to the drink. Garnish with a fresh mint sprig or a chunk of watermelon if desired.
