Almond meal or flour, either will work. Almond meal however is more coarse than flour. I usually use Bobβs red mill almond flour or Trader Joe's Almond meal.
Coconut Flour: I useΒ this brand.
Coconut oil, to prevent the cake from sticking to the mug
Mayonnaise, always use full fat mayonnaise.
Unsweetened cocoa powder
Powdered monkfruit sweetener
Large eggs
Vanilla extract

πͺ Instructions
- Grease the mug with coconut oil.
- Place the sweetener, almond flour, coconut flour, cocoa powder, and baking powder in a 4-cup glass mixing bowl. Stir to combine.
- Whisk together the mayonnaise, egg, water, and vanilla extract. Add the liquid ingredients to the dry ingredients. Stir until the batter is smooth.
- Divide batter between two 4 ounce ramekins or 1 extra large microwave mug cake cup.
- Place the cake batter in the microwave and cook on high power for 2 minutes. If cake is still wet on top, microwave in 10 second intervals until no longer wet.

Large Mug, the mug should be at least a 16 ounce capacity.Β This microwave-safe mug work perfectly.
ThisΒ finger spatulaΒ works perfectly for mixing the mug cake ingredients together. It mixes and can scrape down the sides of the mug as well.

Store any leftover cake in the fridge up to 4 days.

π Variations
- Use full fat sour cream in place of the mayonnaise.
- Substitute almond extract for the vanilla extract
- Serve the mug cake warm with whipped cream your favorite keto ice cream.
- Stir in 2 tablespoons sugar-free chocolate chips or peanut butter chips.
- Frost with a sugar-free Peanut Butter Frosting, Chocolate Buttercream, or Cream Cheese Frosting. (instructions for keto in each recipe)
- Sprinkle with these keto sprinkles!
π Tips
- If you don't have powdered sweetener, blend erythritol in a blender until it is a powder consistency.
- To prevent overcooking, start at the shortest microwave time (2 min). Microwave in 5 second intervals if the cake is still wet on top until it is no longer wet.
- Make your own whipped cream by mixing a cup of heavy cream together with 1 tablespoon of powdered monkfruit until cream forms stiff peaks.
- Slice the cake in half and add filling between the layers. This adds flavor, fat, and moisture!
- Sprinkle a few sugar free chocolate chips on top of the batter before cooking.

Yes, bake it at 350 degrees F. Check after 10 minutes, if still wet on top, bake another 5 minutes. The top should look dry and a toothpick inserted should come out clean.

This recipe looks really good bu if a person is on the keto diet to lose weight, the recommended carb intake per day is approximately 20 grams. So the 10 grams of carbs from this recipe is half a dayβs worth of carbs.

I have been living the keto lifestyle for 4 months and having been craving cake. I also wanted wantedto find a low carb recipe to make my bunny cake this Easter. I stumbled across this recipe and so glad I did. The cake was so moist and tasty. Cannot tell that it's low carb at all. I used cream cheese frosting as oppose to whipped cream (personal preference is all). Now I have to figure out how to make a much larger cake in the oven. I will be making this again!!!

Hi Renee, if you don't eat keto, and want to use confectioners sugar, I believe it will turn out just fine. You could probably use granulated sugar also. You would use the same amount of regular sugar as the substitute.

Iβm blown away with how easy and how insanely yummy this is! First, I chose to use one large ramekin. While waiting for it to cool, I whipped up some sugar free vanilla pudding with heavy cream to sandwich between the layers with a sprinkle of lankanto powdered monk fruit on top - a fabulous version of a whoopee pie. The next experiment was to simply make it and eat it warm. It reminded me of a chocolate lava cake without the lava, lol. There is really so much you can do with this recipe. How brilliant you are!
