Key Ingredients for Pork Al Pastor
See the recipe card at the bottom of this post for a full list of ingredients and instructions.

- Pork shoulder: thinly sliced so it cooks quickly and evenly in the air fryer.
- Achiote paste: adds earthy, vibrant color and flavor to the marinade.
- Chipotle peppers in adobo: smoky heat that pairs beautifully with pineapple.
- Pineapple juice: naturally tenderizes the pork and balances the spice.
- Corn tortillas: traditional base for building tacos al pastor.

Ingredient Substitutions
- Use boneless chicken thighs instead of pork shoulder for a lighter protein.
- Swap flour tortillas for corn if that's what you have on hand.
- Try orange juice in place of pineapple juice for a different citrus note.
Variations on Air Fryer Tacos Al Pastor
- Bowl style: serve the marinated pork and pineapple over rice instead of tortillas.
- Loaded nachos: top tortilla chips with chopped pork, pineapple, cheese, and jalapenos.
- Quesadilla twist: fold the pork filling into tortillas with melted cheese for al pastor quesadillas.

Top Tips for Perfect Pork
- Thin slices: the thinner the pork is sliced, the more tender and flavorful it becomes after marinating.
- Marinate overnight: a full 24 hours gives the pork its deep authentic flavor.
- Pineapple on top: adding chunks directly over the pork while air frying caramelizes the fruit for extra sweetness.

How to Store and Reheat
Leftover tacos al pastor can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm the pork in the air fryer at 325°F for 5 minutes or until hot. Warm tortillas separately before assembling.
