Hash Brown Taco Pie - by Grumpy's Honeybunch
- Preheat oven to 350 degrees.
- Saute Ground beef, garlic, and onion over medium heat until browned. Drain and set aside.
- In large mixing bowl combine package of Simply Potatoes Hash Browns, eggs, light cream, 1 cup of cheddar cheese, chili powder, cumin powder, salt and pepper. Stir until well combined. Add ground beef and stir to combine.
- Place in 9 inch round pie plate that has been coated with cooking spray. Pat mixture down until compact.
- Place in oven and baked for 60 minutes. Remove from oven and top with remaining ½ cup cheddar cheese and sliced tomatoes. Bake another 10-15 minutes, until cheese has melted.
- Serve with Sour Cream and green onion tops.
