    This weight watchers Unstuffed Cabbage Rolls recipe is a low calorie skillet meal with the delicious flavors of cabbage rolls. You get all the deliciousness of traditional stuffed cabbages with little labor.

    Ingredients for unstuffed cabbage rolls
    Diced tomatoes, chopped cabbage, lean ground beef, garlic, and onions are the simple ingredients that make up this easy dinner recipe.

    🥘 Ingredients

    Whole green cabbage, ½ of a small cabbage should yield the 4 cups needed

    Lean ground beef

    Canned diced tomatoes

    Canned diced tomatoes

    Onion

    Garlic cloves

    Italian seasoning

    Salt and black pepper

    Stirring ground beef and cabbage together.

    🔪 Instructions

    1. Heat a large skillet over medium-high heat until hot. Spray the skillet with cooking spray and add the onion and garlic to the skillet. Cook for 2 minutes, stirring often, until onion begins to soften.
    2. Add the ground beef to the skillet and cook, stirring often, for 5 minutes, until beef is browned.
    3. Add the chopped cabbage and stir to combine. Reduce to medium heat and cover, cooking for 7 minutes, until cabbage begins to wilt.
    4. Remove cover and add tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil, then simmer for 6 minutes, until sauce has reduced some.

    Food processor (to chop the cabbage quickly)

    🥫Storage

    Store any leftover casserole in air-tight containers in the fridge up to 4 days or in the freezer up to 3 months. To reheat, place thawed casserole in a microwave safe container and heat in 30 second intervals until warm.

    📖 Variations

    • Use lean ground meat such as ground turkey in place of ground beef.
    • Make unstuffed cabbage roll soup and add 4 cups of low sodium beef broth to the skillet when adding the tomatoes.
    • Add a couple of bay leaves to the skillet while simmering to infuse flavor. Remove the bay leaves before serving.

    💭 Tips

    • Cut cooking time in half and use coleslaw mix in place of the chopped cabbage.
    • For a thicker casserole, use 4 ounce can of tomato paste in place of the tomato sauce.
    • Use a food processor to quickly and easily chop the cabbage.

    The original recipe calls for rice in the dish, however, I like to serve this on top of cauliflower or regular rice instead of stirring it into the casserole.
