🍽️ Meal Planning and Prep Tips
I'm here to share with you recipes to make during the week that aren't hard to make and take little prep. Most feed 4 so if there are just 1 or 2 to feed, you may want to scale down and halve a recipe OR just make a couple of these and enjoy leftovers throughout the week.
This weekly meal plan is pretty easy, most meals can be made very quickly the same night without a lot of prep time.
Here are some short cuts and tips to help you throughout the week.
- The Mexican Casserole can be made on Sunday evening and warmed up on Monday night. Just remember to put the when it is being served.
- Make the lentils on Sunday evening and just reheat when it is time to assemble the tostadas on Tuesday. Any extras of this is excellent for breakfast.
- These are fried in a skillet in shallow oil and because the cutlets are thin, take just minutes to cook. Not much prep needed for this recipe. These can be wrapped up in a homemade flour tortilla instead of served in a roll.
- The shrimp enchiladas can be assembled the evening before and stored in the fridge until it's time to cook for dinner. Easy peasy and SO delicious.
Weekly Meal Plan 12
Mexican Casserole with Ground Beef
Serve Mexican Casserole with Ground Beef with these Air Fryer Tortilla Chips! I also like to add some sour cream and/or homemade guacamole on the side.
Vegetarian Tostadas with Lentils
Serve Vegetarian Tostadas with a drizzle of ranch dressing or this Chipotle Salad Dressing Recipe.
Crispy Chicken Sandwiches
If you love Chick-Fil-A or Popeyes, your are going to love these Crispy Chicken Sandwiches topped with plenty of garlic dill pickles and a side of Parmesan Pasta Salad.
Buffalo Chicken Mac and Cheese
I absolutely love this Buffalo Chicken Mac and Cheese recipe and there are never any leftovers. Drizzle with some blue cheese or homemade ranch dressing and serve with a crisp green salad.
One Dish Pepperoni Pizza
Since it is Friday night, if you have leftovers you can serve those or, make this One Dish Pepperoni Pizza. It is a true one dish recipe and is absolutely delicious!
Dessert of the week
Cookie Butter Caramel Swirl Brownies
Haven't tried cookie butter? Oh, then these Cookie Butter Caramel Swirled Brownies are a must make! These are sweet, delicious and go perfectly with a glass of cold milk or hot cup of coffee.
