🥘 Ingredients
Beef: use an 85/15 ratio for the best flavor and less fat.
Spaghetti Noodles: regular spaghetti noodles work best,
Sour cream: keep this recipe light by using light sour cream.
Cream cheese: choose ⅓ less fat cream cheese
Cheese: Buy the brick cheese and shred it yourself. Cheddar cheese gives great flavor here, but if you're inclined to want to use a softer cheese, then mozzarella works great also.

🙋 Recipe FAQ's
Make sure you are using enough water to boil and stir as soon as the pasta is added to the water, and stirring frequently during the boiling process.
Yes, you can make this recipe low carb by substituting spaghetti squash for the cooked spaghetti.
💭 Tips
- Undercook the pasta by 2 minutes. If you cook it until it is al dente, it will continue to cook while in the oven causing the spaghetti noodles to overcook.
- Be sure the pasta is well-drained and add a drizzle of olive oil to the cooked spaghetti to keep it from sticking together.
- A thick pasta sauce is best to use. If you don't make your own, then be sure to buy one that says thick on the label and one that doesn't look like it is watery.
📖 Variations
- Skip the sour cream and cream cheese and use 1½ cups ricotta cheese. Whisk an egg into the cheese mixture along with a teaspoon of Italian seasoning and ¼ cup parmesan cheese.
- Substitute sweet or hot Italian sausage crumbles for the ground beef. This also will work well with ground turkey.
- Whisk one egg and ¼ cup grated parmesan cheese together. Stir it into the cooked spaghetti noodles. Then place the spaghetti mixture into the casserole and proceed with step 5.
🍽 Equipment
Pasta Pot: for cooking the pasta in.
Wooden Spoon: for stirring the pasta.
Colander: used to drain the pasta.

You're right! I haven't made this in awhile either, but it is really good food! I don't make as much pasta as I did during the 80's and 90's. But back then we were young and invincible to carbs!! Every now and then is still fine though.
