    🍽️ Meal Planning and Prep Tips

    I'm here to share with you recipes to make during the week that aren't hard to make and take little prep. Most feed 4 so if there are just 1 or 2 to feed, you may want to scale down and halve a recipe OR just make a couple of these and enjoy leftovers throughout the week.

    Most of my recipes are easy to make in a short prep time, however I do have some tips to help you with this week's menu!

    Any prep that can be done on Sunday (January 8) is called prep day.

    Instant Pot Chicken Drumsticks are an affordable meal and have so much flavor. If you don't have an instant pot, try these Air Fryer Chicken Legs. Serve with Air Fryer Frozen Fries or Dill Pickle Pasta Salad Recipe

    Air Fryer Cod is another quick and easy dinner. I like to serve it with a side of Air Fried Asparagus and German Style Potato Salad.

    I love this One Pot Alfredo, everything, right down to the pasta is cooked in one pot. Super easy, and great comfort food for the middle of the week. Serve with a green salad and Italian vinaigrette.

    Instead of rice, this cabbage roll recipe uses riced cauliflower. It is so delicious and believe me you don't miss the rice! Serve this with your mayonnaise mashed potatoes or stick to low carb and serve with garlic mashed cauliflower for a complete dish.

    If you are a fan of pan pizzas similar to Pizza Hut, then you will love this Meat Lover's Skillet Pizza. Make one big pizza in a large skillet or smaller personal sized pizza.

    Just a few weeks and Valentine's Day will be here, but don't wait til then to try this martini! This is the best chocolate martini I have had, and I did plenty of testing before I found one I was happy with!

    Make these Banana Walnut Muffins and enjoy them over the weekend as part of your breakfast. Serve with scrambled eggs, bacon, or sausage and a hot cup of coffee or this creamy hot cocoa!
