Miso Maple Salmon
Equipment

Ingredients
- 1 pound wild caught salmon
- ¼ cup white miso paste
- 2 tablespoons maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon sesame oil
- ½ teaspoon black sesame seeds , optional garnish
Instructions
Make the maple miso glaze:
- In a large shallow bowl, combine the miso pasta, maple syrup, soy sauce, rice wine vinegar, and sesame oil.
- Using a hand whisk, mix until marinade ingredients are well combined. Reserve 2 tablespoons of glaze and place in a small bowl. Set aside.
Marinate the salmon:
- Pat salmon with paper towels to remove any excess moisture.
- If desired, cut salmon filet into 3-4 equal pieces. Place in marinade and turn to coat, leaving meat side down after turning.
- Place in refrigerator and allow salmon to marinate for at least 1 hour.
Bake the salmon:
- Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper.
- Place salmon on prepared baking sheet and season with salt and black pepper.
- Bake salmon rack centered in the middle of the oven for 10-15 minutes, until internal temperature reaches 145 degrees F.
- Remove salmon from oven turn oven on broil setting.
- Using a silicone pastry brush, coat top of the salmon filets with reserved marinade and place back in oven for 2-3 minutes.
- Remove from oven and sprinkle with sesame seeds and scallions.
