wild caught salmon

white miso paste

maple syrup

soy sauce

rice wine vinegar

sesame oil

teaspoon
black sesame seeds

Instructions
Make the maple miso glaze:
In a large shallow bowl, combine the miso pasta, maple syrup, soy sauce, rice wine vinegar, and sesame oil.
Using a hand whisk, mix until marinade ingredients are well combined. Reserve 2 tablespoons of glaze and place in a small bowl. Set aside.
Marinate the salmon:
Pat salmon with paper towels to remove any excess moisture.
If desired, cut salmon filet into 3-4 equal pieces. Place in marinade and turn to coat, leaving meat side down after turning.
Place in refrigerator and allow salmon to marinate for at least 1 hour.
Bake the salmon:
Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper.
Place salmon on prepared baking sheet and season with salt and black pepper.
Bake salmon rack centered in the middle of the oven for 10-15 minutes, until internal temperature reaches 145 degrees F.
Remove salmon from oven turn oven on broil setting.
Using a silicone pastry brush, coat top of the salmon filets with reserved marinade and place back in oven for 2-3 minutes.
Remove from oven and sprinkle with sesame seeds and scallions.
