    This Air Fryer Salmon Bites recipe is made with fresh salmon pieces coated in a sweet and spicy gochujang glaze and is the easy way to put an easy weeknight meal on the table in a short cooking time!     🥘 Ingredients

    Fresh salmon filets: cut into 1 to 1-½ inch cubes, skin removed

    Gochujang paste: this a thick and spicy sweet chili pepper paste, often used in Korean cooking. This can be found in the refrigerated section of the grocery store (or in shelf stable gochujang in the Asian section).

    Mirin: a sweet japanese rice wine

    Light brown sugar

    Soy sauce

    Fresh garlic

    Black sesame seeds

    Olive oil cooking spray: to spray the air fryer basket or tray to prevent the salmon nuggets from sticking.

    Salt and Black pepper: optional to season food individually if desired

    Gochujang marinade in a white bowl.
    Mix together gochujang glaze ingredients
    Raw salmon in white bowl with gochujang marinade.
    Marinate salmon pieces.
    Raw pieces of salmon with marinade on air fryer tray.
    Place salmon in single layer with room between pieces to allow air circulation.
    Partially cooked air fryer salmon bites on an air fryer tray.
    Apply any glaze remaining from marinade halfway through cooking time.

    🔪 Instructions

    1. In a small bowl, whisk together gochujang, mirin, brown sugar, soy sauce, and garlic until combined.
    2. Place salmon cubes in another small mixing bowl and cover with combined marinade ingredients. Set aside and allow to marinate for 5 minutes.
    3. Meanwhile, preheat air fryer at 400 degrees for 5 minutes.
    4. Spray air fryer basket or tray with cooking spray.
    5. Place salmon chunks in air fryer basket or tray in a single layer, leaving room between pieces to allow air to circulate. Reserve remaining glaze for later use.
    6. Place basket or tray in air fryer and cook for 5 minutes.
    7. Remove salmon from air fryer and using a silicone brush, brush any leftover glaze over salmon bites.
    8. Return salmon to the air fryer and cook for 5 minutes, or until fish flakes easily with a fork.

    Glazed salmon bites have crispy outside bites with tender salmon inside and a delicious sweet and spicy gochujang glaze.

    Paper towels: to pat the salmon dry before cutting and adding the marinade.

    Small hand whisk

    Refrigerate: store in an airtight container up to 4 days.

    Freeze: store in a freezer safe airtight container up to 3 months.

    Reheat: gently reheat thawed salmon in the air fryer at 350 degrees for 5 minutes, or in the microwave until warmed through.

    📖 Variations

    • Use ½ teaspoon garlic powder instead of fresh garlic
    • Substitute teriyaki sauce (bought at the grocery store or make your own teriyaki sauce) for the gochujang sauce.
    • Garnish with green onions instead of black sesame seeds
    • Add ½ teaspoon sesame oil and minced fresh ginger each for a more pronounced Asian flavor.

    💭 Tips

    • Remove the skin from the salmon before cooking or buy skinless salmon fillets.
    • If you don't have an air fryer, bake these salmon bites by lining a baking sheet with parchment paper and roast in the oven at 400 degrees F for 5 minutes. Flip bites over and brush with any remaining glaze. Return to the oven and bake another 7 minutes, until fish flakes easily with a fork and outside of salmon has crispy bits.

    How do you know salmon is cooked?

    If gauging by internal temperature, then the meat thermometer should indicate 125-130 degrees. However with these salmon bites, you will know they are done when the fish flakes easily with a fork.
