    Fingerling potatoes

    Onion powder

    Garlic powder

    Truffle salt (or use regular salt and black pepper)

    Cornstarch: the secret ingredient to keeping the potato extra crispy! (optional and not required)

    Olive oil

    Step 1: Cut fingerling potatoes into wedges.

    Step 2: toss with oil
    Seasoned potato wedges in a bowl.
    Step 3: add seasoning

    Step 4: coat with cornstarch

    🔪 Instructions

    1. Preheat air fryer at 400 degrees f for 5 minutes.
    2. Wash potatoes and pat dry with a paper towel. Cut into potato wedges and place in a large bowl.
    3. Drizzle potatoes with olive oil and toss to coat. Set aside.
    4. In a small bowl, combine the onion powder, garlic powder, and salt. Pour seasoning over top of the prepared potatoes and toss to coat.
    5. Add the cornstarch to the potatoes and toss to coat well.
    6. Place potatoes on an air fryer basket or tray in a single layer.
    7. Cook potatoes for 10 minutes. Remove air fryer basket or tray and toss potato wedges. Return to the air fryer and cook another 5 minutes, until potatoes are golden brown.

    🥄 Equipment

    Air Fryer: I have used both a basket air fryer and tray air fryer. Both work great for this recipe.

    🥫Storage

    Refrigerate: store leftovers in an airtight container up to 4 days.

    Freeze: not recommended, you will likely not have leftovers as this is a small batch recipe.

    📖 Variations

    • Toss a tablespoon of parmesan cheese to potatoes before cooking.
    • Add some of your favorite fresh herbs or dried italian seasoning.

    💭 Tips

    • If using an air fryer with trays instead of an air fryer basket, for best results, be sure to put the air fryer tray on the bottom rack so the potatoes will evenly brown. If desired, the last minute of cook time you can place the tray on the top rack to brown the potatoes a little more.
    • Cook times may vary depending on the size of your air fryer and/or potatoes. Larger potatoes will need longer cook times.
    • Roast these fingerling potatoes in the oven instead. Preheat oven to 400 degrees F. Place potatoes on a baking sheet and roast for 30 minutes

      I love fingerling potatoes and buy them every time I see them!
