Fingerling potatoes are quarted, seasoned, and roasted in the air fryer until crispy and golden brown on the outside. They have a creamy texture and are addictingly delicious!

Wash potatoes and pat dry with a paper towel. Cut into potato wedges and place in a large bowl.
Drizzle potatoes with olive oil and toss to coat. Set aside.
In a small bowl, combine the onion powder, garlic powder, and salt. Pour seasoning over top of the prepared potatoes and toss to coat.
Add the cornstarch to the potatoes and toss to coat well.
Place potatoes on an air fryer basket or tray in a single layer.
Cook potatoes for 10 minutes. Remove air fryer basket or tray and toss potato wedges. Return to the air fryer and cook another 5 minutes, until potatoes are golden brown.
