What I love about this air fryer recipe is it is a great way to use any leftover mashed potatoes you have on hand. It is super versatile and you can change up the add ins to your favorite items.
It's a great way to use any leftover ham from Easter dinner and makes the perfect side dish to a juicy burger. Its much easier than deep frying and you get the same delicious results with only a little oil.

For the basic recipe you will need mashed potatoes, cheddar cheese, and large eggs. If adding in chorizo and jalapeno you will also need those ingredients. If making the chipotle sour cream you will need sour cream, chipotle chili powder, and salt.
🔪 How to make Air Fryer Potato Puffs
- Place mashed potatoes in large bowl. Add shredded cheese, diced jalapeno pepper, minced chorizo, and eggs, stirring until well combined.
- Using a small cookie scoop, scoop 1-½ tablespoons of the potato mixture onto parchment lined air fryer basket or in a round accessory dish that has been well oiled with either olive oil or cooking spray. Leave some space between each potato puff and line them in a single layer in the pan.
- Air fry at 400 degrees F for 10 minutes, until potato puffs are golden brown and crispy on the outside.
- While the potato puffs are cooking, make the chipotle sauce. In a small bowl, combine the sour cream, chipotle powder, and salt.
- Serve with sauce and garnish with cilantro.
🎛️ How to Bake Potato Puffs in the Oven
Using the oven will increase the cooking time for the potato puffs, but it can be done with delicious golden brown crispy potato puff results!
- To bake in regular oven, place potato puffs on a well oiled baking sheet.
- Bake at 375 degrees F for 30 minutes.
📖 Variations
Flavor swap: skip the chipotle powder and season with ½ teaspoon each of garlic and onion powder.
Meat swap: substitute chopped crispy cooked bacon or diced ham for the chorizo.
🥫Storage
Refrigerate: Store leftover potato puffs in an airtight container in up to 3 days.
Freezer: For longer storage, freeze individual puffs on a baking sheet. Once frozen, transfer to an airtight freezer bag.
To reheat the potato puffs: place frozen puffs in the air fryer on 350 degrees for 7-10 minutes, or in the oven for 20-25 minutes, until warmed through.

- Brick cheese: for best flavor use brick cheese and shred it yourself using a box grater.
- Perfectly portions potato puffs: use a 1 tablespoon sized cookie scoop and portion a generous scoop of potato mixture for equally sized portions.
🙋 Things to Know
The type of mashed potato you use will make a difference in texture. If using frozen mashed potatoes, or instant mashed potatoes, make them ahead of time and allow them to come to room temperature and thicken up before mixing. If you are using leftover mashed potatoes you made yourself, the mixture may need to be warmed up to room temperature before mixing the ingredients.
