This Instant Pot Ham and Cabbage Recipe is a hearty one-pot meal that makes the most of leftover ham and a meaty ham bone. It's warm, satisfying, and budget-friendly, perfect for a cozy family dinner.

I grew up with ham and cabbage simmering on the stovetop, and this Instant Pot version brings all that same comfort in a fraction of the time. If you've tried my Instant Pot Corned Beef dinner, you'll love how quick and hands-off this recipe is too.

Key Ingredients for Ham and Cabbage Dinner
See the recipe card at the bottom of this post for full ingredient list and instructions.

- Ham bone: adds deep, smoky flavor to the broth.
- Leftover ham: meaty chunks bring extra texture and protein.
- Potatoes: hearty and tender, they help make the dish filling.
- Carrots: add natural sweetness.
- Onion: brings balance and flavor to the broth.
- Cabbage: cooks down into tender, comforting bites.
- Bay leaf: subtle earthy flavor to round out the dish.
Ingredient Substitutions
- Use smoked turkey leg instead of ham bone for a different flavor.
- Try sweet potatoes in place of white potatoes.
- Swap parsnips for carrots for a slightly sweeter, earthy flavor.

Variations on Instant Pot Ham and Cabbage
- Add canned white beans for extra protein and fiber.
- Stir in a spoonful of apple cider vinegar before serving for added brightness.
- Top with fresh parsley or dill for a herby finish.
Tips for Perfect Ham and Cabbage
- Don't overfill: keep liquid below the Instant Pot max line for safe cooking.
- Cut evenly: chopping potatoes and carrots into uniform pieces helps them cook evenly.
- Add meat last: stir ham pieces back in after cooking so they stay tender, not mushy.

How to Store and Reheat
Refrigerate leftovers in an airtight container for up to 4 days. To reheat, warm gently on the stove or in the microwave until hot. For a crisp reheat, place servings in the air fryer at 350°F for 5-7 minutes.
