Ingredient Substitutions
- Swap in pinto or kidney beans for black beans.
- Use shredded cooked turkey or leftover rotisserie chicken instead of ground for a great way to repurpose leftovers.
- Try Monterey Jack or Mexican blend cheese for a different flavor profile.

Variations
- Use red enchilada sauce if preferred over green.
- Add a small can of green chiles to the filling for a little extra heat.
- Substitute flour tortillas if you prefer a softer texture.
Top Tips
- Warming the tortillas first makes them easier to work with.
- A dab of sauce on the inside edge of the tortilla helps keep them sealed.
- Don't skip the resting time, this helps everything set before serving.
Storage and Reheating
Refrigerate: store leftovers in an airtight container in the fridge up to 5 days.
Freeze: leftovers can be stored in an airtight freezer safe container up to 1 month.
Reheat: reheat thawed leftovers in the air fryer at 350 degrees for 7-10 minutes, or in the microwave until warm.

Ingredients
- 1 pound ground turkey
- 1 large onion , diced
- 1 tablespoon minced fresh garlic
- 2 teaspoons olive oil
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon ground pepper
- 2 tablespoons tomato paste
- 15 ounces canned black beans , rinsed well and drained
- 1 teaspoon chicken bouillon granules
- 1 lime , juiced
- 12 yellow corn tortillas
- 1 cup shredded cheddar cheese
- 14 ounces green chili enchilada sauce
Instructions
- Heat oil in a large skillet over medium-high heat until hot.
- Add the diced onion and garlic and sauté for 6 minutes, until the onion is translucent. Add the ground turkey to the onion mixture and break it up using a meat masher.
- Stir in the cumin, chili powder, and black pepper. Add tomato paste and lime juice; stir to combine.
- Add the beans and bouillon granules, and mix to combine. Lightly coat the baking dish with green enchilada sauce, set aside.
- Microwave corn tortillas for 1 minute. They will be hot but as they cool, they will be pliable enough to roll and not break. Add a heaping tablespoon of turkey mixture to the center of each tortilla and roll tightly.
- After rolling, place seam side down in the prepared dish, then add more enchilada sauce to the tops of the enchiladas.
- Air fry at 375°f for 8 minutes, add cheese to tops of the enchiladas, and then cook for 3 minutes longer.
- Let cool 10 minutes before serving.
