When I want something nostalgic, but a little less fussy than a full corn dog, this recipe hits the spot. It reminds me a lot of my Maple Cornbread Muffins, but with the extra flavor boost from adding sausage like kielbasa or andouille to the batter.

Sausage Corn Dog Bites
Equipment
- Air Fryer , oven can be used, see notes for instructions.
- Silicone muffin liners

Ingredients
- 2 8.5 ounce Jiffy Corn Muffin Mix
- 2 large eggs
- 1 cup milk
- 13 ounces kielbasa sausage , cut into 1" thick slices
Instructions
- In a large bowl, using a hand whisk, mix together the jiffy mix, eggs, and milk the cornmeal batter is smooth.
- Place sausage pieces into a cupcake liner.
- Pour cornbread mix into the liner until sausage is just barely covered.
- Place filled liners in air fryer basket and cook at 325°f for 10 minutes.
- Remove sausage bites and let cool slighlty before serving.
