Why I made this Keto Reuben Sandwich
My very favorite sandwich pre-keto was the Reuben. I loved the buttery toasted rye bread combined with the salty corned beef and tangy sauerkraut. Buttery swiss cheese and a sweet and tangy Thousand Island Dressing were just delicious on this corned beef sandwich!
I knew I had to have a low carb version that I would be able to enjoy when I had the craving for a Reuben. So, in preparation for this sandwich, I went ahead and created a Keto Rye Bagel and a sugar-free Thousand Island Dressing recipe. This was a double win for me because the dressing also happens to be Grumpy's favorite dressing of all time!
What is a Keto Reuben Open-Faced Sandwich?
The Keto Reuben is a low carb version of an American Grilled Sandwich made up of corned beef, sauerkraut, cheese, and Russian Dressing. I used a Keto Rye Bagel instead of bread and used a sugar-free Thousand Island Dressing to sauce it up!!
What kind of meat do you eat on a Keto Reuben Sandwich?
The traditional meat is corned beef. You can buy it at the deli, or you can used leftover corned beef from a roast. However, I have used turkey or pastrami. When you use pastrami, you do have what is called the "Rachael". I feel you can add any type of protein that is your preference.
Can I substitute Coleslaw for Sauerkraut?
You can, but that again, turns this Keto Reuben into a Rachael sandwich, especially if you use pastrami! I personally love the tang of sauerkraut in this sandwich!
What kind of dressing do you use in a Keto Reuben Sandwich?
The traditional is Russian. We prefer Thousand Island Dressing. The flavors however, are very similar where the Russian may have a sweeter side (and no pickles).
What do you eat with a Keto Reuben Sandwich?
When your eating a Keto Reuben, I recommend eating a low carb dill pickle or Pickled Green Beans! If you have a hankering for a chip on the side, try this Keto Zucchini Chips with Everything but the Bagel Seasoning!
How to make your Open-Faced Keto Reuben Sandwich
Slice your bagel in half and assemble ingredients needed for the sandwich.
Place 1 tablespoon dressing on top of each bagel half.
Place 2 oz corned beef slices and 1 tablespoon sauerkraut on top of the dressing layer.
Place a cheese slice on top of the sauerkraut and place bagel in the toaster oven or regular oven on the broil setting.
Broil sandwiches until cheese has melted and started to brown. Remove from the toaster oven and enjoy!

Keto Reuben - Open Faced Sandwich

Ingredients
- [1 Keto Rye Bagel]
- [2 tablespoons Thousand Island Dressing]
- 4 oz sliced corned beef
- 4 tablespoons sauerkraut
- 2 oz sliced swiss cheese
Instructions
- Pre-heat toaster oven on broil while assembling your sandwich
- Slice bagel in half and cover each half with 1 tablespoon Thousand Island Dressing.
- Place 2 oz corned beef on each bagel half.
- Place 1 tablespoon (or more if you wish) sauerkraut on top of corned beef.
- Lay 1 oz slice swiss cheese on top of sauerkraut.
- Place in toaster oven and broil until cheese is melted and bubbly.
