    This mouthwatering Buffalo Chicken Casserole recipe is not only delicious but also low carb, making it the perfect guilt-free comfort food.     Onion 

    Jalapeno:optional, but I love the flavor of jalapeno so added it to my recipe.

    Mushrooms: these are chopped into bite sized pieces

    Cauliflower: I buy the whole head and chop it into cauliflower rice size pieces.

    Chicken: i like to use shredded chicken from my Air Fryer Rotisserie Chicken recipe.

    Olive oil: or avocado oil

    Cheddar cheese: buy the brick and shred it yourself.

    Mayonnaise

    Greek yogurt

    Large egg

    Hot sauce: my fav is Frank's Buffalo Sauce, but I also love Texas Pete's. You can increase or decrease the amount of hot sauce to your own heat preference.

    Ranch seasoning: I use a powdered ranch seasoning I bought at Trader Joes. You could use Hidden Valley Ranch dressing dry mix as well.

    Cilantro and green onions (optional) for garnish

    πŸ”ͺ How to Make Buffalo Chicken Casserole

    1. Preheat oven to 350 degrees F. Spray an oblong baking dish with cooking spray and set aside.
    2. In a small bowl, whisk together the mayonnaise, yogurt, and large egg. Set aside. 
    3. Heat olive oil in a large skillet over medium high heat until hot. Add diced mushrooms, onion, and garlic. Cook and stir for 2 minutes, until vegetables have softened.
    4. Stir riced cauliflower into the skillet and stir to combine. Cook for 3 minutes, until cauliflower has begun to soften. Remove the skillet from the burner and set aside to cool for 5 minutes.
    5. Add the hot sauce, shredded chicken, ranch seasoning, and shredded cheese to the skillet and stir to combine. 
    6. Stir in the mayonnaise mixture to combine, then transfer to prepared baking dish. Sprinkle with 2 ounces shredded cheese.
    7. Bake for 30 minutes, until cheese has melted on top and edges of the casserole are golden brown. Cool for 10 minutes before serving.

    Here are a few different ways you may like to change up your own casserole recipe:

    Veggie Power: Mix in some diced bell peppers, onions, or broccoli for extra nutrients and crunch.

    Cheese Choices: Experiment with different cheeses like shredded mozzarella cheese or pepper jack cheese.

    Topping Twist: For added texture, sprinkle crushed pork rinds or almond flour on top before baking.
