Substitutions
Flour swap: use almond flour for hazelnut flour.
Flavored coffee swap: use any coffee flavor you desire, some ideas would be hazelnut, mocha, french vanilla, or caramel.
Cheese swap: full fat cream cheese can be substituted for the mascarpone cheese.
Variations
More intense coffee flavor: use this homemade coffee liquor (keto-friendly) to replace the brandy.
Chocolate Chip topping: Sprinkle the top of the keto tiramisu with sugar-free chocolate chips instead of cocoa powder.
Equipment
- Microwave safe cake mug: look for a mug that is straight and consistent in size. A mug that is narrower on the bottom than top will result in uneven cake layer.
- Dessert shooter or short drinking glasses
- Small mixing bowls
Top Tips
- Use a mug that is similar in diameter to the glass it will be served it in. This will make the assembly of your dessert easier.
- Check your cake for doneness by inserting a skewer into the center of the cake. If it comes out clean, it is ready. If there is batter on it, you will need to bake it a little longer.
- Be sure to grease your baking mug will with coconut oil butter or coconut oil. This will help to remove the cake from the mug.
- If the cake doesn’t just tip out, run a butter knife around the edge of it to loosen the sides.
Things to Know
Tiramisu means pick me up in Italian and originates from Treviso, Italy in the 1960’s. A traditional tiramisu would usually consist of ladyfingers dipped in coffee, layered with a mascarpone filling and dusted in cocoa. As ladyfingers are not keto-friendly, the coffee cake made in the microwave is an excellent substitute.
Storage
Store keto tiramisu in the fridge covered tightly with plastic wrap in the fridge up to 3 days.
