This chicken bagel melt is a simple recipe made with easy to obtain ingredients. Be sure to buy fresh bagels as they are bigger and have far better flavor than the bagels sold in the freezer section. I like to buy the individual bagels in the bakery department.

- Asiago Bagel: I buy these from the grocery store bakery department.
- Cooked chicken breast: you can buy it precooked from the store or use any leftover chicken on hand.
- Shredded mozzarella cheese
- Chili Lime Seasoning Blend
- White onion
- Marinara sauce
- Olive oil
- Jalapeno
- Fresh cilantro
Instructions
Saute onion and jalapeno in olive oil 2-3 minutes. Add chicken and sauce, heat over medium heat until warmed through.
Slice each bagel in half, place on a baking sheet, and top with chicken mixture.
Generously top each bagel half with mozzarella cheese.
Place in the preheated oven and bake 10 minutes, until cheese is melted. Garnish with jalapeรฑo slices and cilantro, if desired.
Hint: after 10 minutes bake time, turn the oven to the broil setting and watching carefully, broil for 1-2 minutes, until the cheese begins to brown.
Substitutions
If you are following a low carb keto diet, then you can make the substitutions below to make this a keto friendly bagel melt.
- Keto bagel - use this keto rye bagel or keto asiago bagel recipe for the bread base.
- Marinara sauce - substitute tomato sauce with a teaspoon of Italian seasoning or buy a low carb pasta sauce.
- Omit onions - if you want to lower the carbs as much as possible, you can leave the onions out.

Chili Lime Chicken Bagel Melt

Ingredients
- 1 large bakery bagel , sliced in half
- 3 ounces cooked chicken , sliced thin
- โ cup sliced onion
- ยฝ tablespoon olive oil
- ยฝ cup marinaria sauce
- ยฝ teaspoon Chili Lime Seasoning
- ยฝ cup shredded mozzarella cheese
- 6 slices jalapeno rings , optional
- ยฝ tablespoon fresh cilantro , chopped
Instructions
- In a large skillet, heat olive oil over medium heat. Add onion and jalapeno slices and cook until onions start to become translucent.
- Add chicken breast slices and toss to combine. Season with chili lime seasoning. Stir in pasta sauce and remove from heat.
- To assemble the sandwich, divide chicken mixture between bagel halves. Top with mozzarella cheese and bake in oven about 10 minutes, until cheese begins to melt.
- Turn oven broiler on low and broil until cheese begins to brown.
- Remove bagel halves from oven and top with chopped cilantro and jalapeno slices if desired.
