Avocado Sprouts Sandwich

Ingredients
- 2 slices whole wheat bread
- ¼ medium avocado mashed
- 2 slices tomato
- 6 slices cucumber
- 1 tablespoon red onion slices
- ½ cup fresh sprouts
- 1 tablespoon chipotle dressing
Instructions
- Place the avocado in a small bowl and season with salt and pepper. Using the tines of a fork, mash avocado to make it spreadable.
- Spread the mashed avocado on the bottom slice of bread.
- Next, top avocado layer with tomato slices, red onion slices, cucumber slices, and a handful of alfalfa sprouts.
- Spread the remaining piece of bread with chipotle mayo. Place spread side down on alfalfa sprouts. Cut and serve as desired.
