Whenever I have leftover rotisserie chicken, I also know that there will be chicken salad sandwiches made with leftovers. The first time I had a this recipe with grapes in it was at a popular lunch spot in Potsdam, NY. It was served to me on a golden crusty croissant roll and with the combination of sweet and savory it became my favorite sandwich.
I think of that sandwich often and since I moved away from that area, I miss not being able to go to that little classy lunch spot to enjoy it.
What You Need To Make This Recipe
Seedless red grapes for a touch of sweetness.
Toasted almonds to add a buttery crunch to the salad.
Celery adds another touch of freshness to this recipe.

Chicken Salad Recipe with Grapes

- 4 cups cooked chicken cubed
- 1 cup halved seedless grapes
- 1 cup sliced almonds toasted
- 2 stalks celery finely diced
- 2 scallions, white and green parts thinly sliced
- 2 tablespoon fresh dill chopped
- ¾ cup mayonnaise
- 1 tablespoon lemon juice freshly squeezed
- 1 tablespoon djion mustard
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 8 croissants (optional)

- In a large mixing bowl, combine the mayonnaise, mustard, and lemon juice with a hand whisk, until well combined.
