    Chicken Salad Recipe with grapes makes a great lunch and can be enjoyed wrapped up in lettuce, served on a croissant, pita bread, wrap, or this soft homemade bread recipe! The fresh red grapes and toasted almonds take this chicken recipe to a level of deliciousness that will make it a crave worthy lunch sandwich.

    My First Chicken Salad Sandwich With Grapes

    Whenever I have leftover rotisserie chicken, I also know that there will be chicken salad sandwiches made with leftovers. The first time I had a this recipe with grapes in it was at a popular lunch spot in Potsdam, NY. It was served to me on a golden crusty croissant roll and with the combination of sweet and savory it became my favorite sandwich.

    I think of that sandwich often and since I moved away from that area, I miss not being able to go to that little classy lunch spot to enjoy it.

    What You Need To Make This Recipe

    Seedless red grapes for a touch of sweetness.

    Toasted almonds to add a buttery crunch to the salad.

    Celery adds another touch of freshness to this recipe.

    Scallions to add flavor.

    Fresh dill because it compliments this recipe completely!

    Mayonnaise for the dressing base.

    Dijon Mustard to add a little sharpness to the flavor combination.

    Lemon juice to give the salad a touch of acid that will balance out all the flavors.

    Tips and Substitutions

    • If you don't have leftover chicken, buy pre-cooked chicken from the store. Or, do like I do and make a rotisserie chicken at home.
    • Substitute greek yogurt for the mayonnaise to lighten the salad up.
    • Use toasted pecans or walnuts in place of the almonds.
    • Use green grapes or purple grapes, but make sure they are seedless.
    • Substitute dried cranberries or cherries for the grapes.

    Ingredients
      

    • 4 cups cooked chicken cubed
    • 1 cup halved seedless grapes
    • 1 cup sliced almonds toasted
    • 2 stalks celery finely diced
    • 2 scallions, white and green parts thinly sliced
    • 2 tablespoon fresh dill chopped
    • ¾ cup mayonnaise
    • 1 tablespoon lemon juice freshly squeezed
    • 1 tablespoon djion mustard
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • 8 croissants (optional)

    Instructions
     

    • In a large mixing bowl, combine the mayonnaise, mustard, and lemon juice with a hand whisk, until well combined.

    • Add the chicken, grapes, almonds, celery, scallions, and fresh dill. Toss to coat.
