    Extra-virgin olive oil

    Baby bell peppers and green onions bring sweet and peppery notes to the dish.

    Garlic cloves add a beautiful pungent flavor and enhance the aromatic appeal.

    Great northern beans, also known as "large white beans", add a delicate, nutty flavor.

    Smoked paprika and thyme enhances the flavor of the dish and adds a rich, smoky flavor to each bite.

    🔪 Instructions

    Make the glaze:

    1. Combine the molasses, bourbon and mustard in a small bowl. Season the pork chops with salt and black pepper, then brush with half the bourbon mixture. Preheat broiler on high.

    Sear the pork chops:

    1. In a cast iron skillet, heat ½ tablespoon of the olive oil over medium-high heat. Add the pork chops and cook until 2 to 3 minutes per side, until pork chops are golden brown. Transfer the pork chops to a plate.
    Diced peppers, garlic, and onions on a red cutting board.

    Cook the beans:

    1. Add the remaining olive oil to the skillet. Add the baby bell pepper, green onion and garlic. Cook, over medium heat, for 3 minutes, until the vegetables start to soften..
    2. Add great northern beans, paprika, thyme salt, and pepper to taste. Saute for 2 minutes stirring occasionally.

    Glaze the pork:

    1. Place pork chops on top of the bean mixture and pour in any accumulated juice over pork. Brush the chops with the remaining glaze.
    2. Place the skillet under the broiler. Broil 2 to 5 minutes, until an instant-read thermometer inserted into a pork chop registers 160°F.
    3. Let pork rest 5 minutes before serving

    Can you use the beans straight from the can?

    Yes, it is perfectly safe to do so, however, rinsing your beans will reduce the sodium content.

    Why did my pork chops come out tough?

    Cooking pork chops even a few minutes too long will significantly dry them out which causes them to toughen.

    Can I use different cuts of meats for this pork chop recipe?

    Yes, you can use pork loin steaks or boneless pork cutlets. Cooking time will differ so pay close attention to temperature.

    💭 Tips

    • Spraying the inside of your measuring cup with cooking spray will keep the molasses from sticking to the inside.
    • The handle of the skillet gets hot fast. Be sure to have your oven mitts ready!
    • For easy clean up use a silicone basting brush instead of one with natural bristles.

    • Maple syrup or brown sugar can be substituted for the molasses
    • Navy beans can be substituted for the great northern beans.
    • Yellow mustard can be used in place of dijon mustard.

    Ingredients
      

    • 1 tablespoons molasses
    • 1 tablespoon bourbon or apple juice
    • ½ tablespoon Dijon mustard
    • 2 bone-in pork chops
    • ¼ teaspoon salt
    • ¼ teaspoon ground pepper
    • 1 tablespoons extra-virgin olive oil
    • ½ cup baby bell peppers diced
    • ¼ cup sliced green onions
    • 2 cloves garlic minced
    • 15 ounces great northern beans , rinsed and drained
    • ½ teaspoon smoked paprika
    • ¼ teaspoon dried thyme
