    Classic Lobster Rolls

    Fresh steamed lobster is combined with a fresh tarragon lemon dressing to make these Classic Lobster Rolls. These sandwiches are a cool, refreshing, and delicious summer meal for those hot days you don't want to cook!

    These Lobster Rolls are perfect for those summer special holidays! Want to make Mom or Dad feel special? Then serve them this delicious lobster salad in a New England Style Hot Dog roll. And, be sure to butter each side of the roll and toast it before filling with this Classic tasty treat!

    Classic Lobster Rolls

    Classic Lobster Rolls are a cool and delicious summer sandwich!

    When it's hot outside, the last thing I want to do is heat up my kitchen by using my stove or oven. I give it as minimal use as possible. So, when lobster went on sale at the grocery store I took advantage and had the store steam them before bringing them home. The hardest part of this job was removing the lobster meat, but it was oh so worth it!

    Lobster really is a luxury item in our household and we don't eat it too often. It's way too expensive for me to buy on a regular basis, so it's a real treat when we do get it and I'm more than happy/willing to break all that meat from the shell to have a delicious meal!

    I was so excited about getting to eat this Classic Lobster Roll that I completely forgot to take photos of my set up and ingredients! However, I don't think you mind all that much, right?

    So, I just have rolled with the punches, sucked it up and just shared more photos of the sandwich. You don't mind though, do you? 🙂

    Toasting the New England Style Roll!

    To me, it just isn't a Classic Lobster Roll without a toasted New England Style Hot Dog Bun. These split top rolls have the side of the roll cut so you can butter and toast them. This gives them an even richer and more fancy look and flavor!

    I did manage to remember to take a pic of the buns toasting on the skillet. This is the only time I used heat in my house for making these Classic Lobster Rolls!

    What to serve with Classic Lobster Rolls

    These Lobster Rolls are so delicious, you may just decide to eat two and call it finished. However, if you like to have another item on your plate beside a sandwich, then try this light and refreshing Strawberry Rhubarb Salad, or maybe a more fresh garden Cucumber, Tomato, and Basil Salad. A delicious beverage to serve with this would be this sugar-free Rhubarb Lemonade recipe!

    How to make this a Keto Recipe

    Now that we are low carb in our home, while I may miss my New England Style Roll, I still can enjoy this recipe. Just serve it up in a lettuce cup, or, try toasting a Keto Slider Bun and enjoy the salad as a sandwich still!

    Ingredients
      

    • 3 tablespoon mayonnaise
    • ½ teaspoon Lemon rind
    • 1 teaspoon tarragon minced
    • ½ teaspoon dijon mustard
    • 1½ teaspoon lemon juice
    • 2 teaspoon minced green onions
    • 2 tablespoon finely chopped celery
    • 4 cups Lobster meat cut into bite sized pieces
    • 4 New England Style Hot Dog Rolls toasted
    • 2 tablespoon butter

    Instructions
     

    • In a large small mixing bowl, stir together mayonnaise, lemon rind, tarragon, mustard, and lemon juice.
    • Toss together lobster meat, celery, and green onions.
    • Stir mayonnaise dressing into lobster ingredients until well coated.
    • Spread hot dog bun on each side with butter and toast each side until browned.
    • Divide lobster salad mixture between hot dog rolls.
    • Alternatively, serve the lobster salad in lettuce cups for a low carb sandwich.

    Notes

    Omit the hotdog rolls for a total of 4 carbs per serving, making this a low carb and keto friendly salad!

      Oh, how I wish someone in my house besides me liked lobster! Can you believe it??? I made lobster salad in endive leaves for book club once, and I think I'll have to figure out a way to make some lobster salad ASAP---even if it's just for me!
