This Seafood Pasta is made with spaghetti and tossed with clams and shrimp simmered with garlic, onion and sun dried tomato pinot grigio sauce. This is a quick and easy Italian recipe you can have on your table in less than 30 minutes!

Dried spaghetti: I love Dreamfields pasta.
Onion: use white or yellow
Garlic cloves: choose large cloves of garlic.
Sun dried tomatoes: I like to use the vacuum packed sun dried tomatoes
Extra virgin olive oil
Shrimp: buy fresh or frozen shrimp, just be sure it is peeled and deveined with tails removed.
Clams: buy steamer clams, commonly found in all grocery stores.
Pinot grigio: this is a white wine with a bright crisp flavor.
Fresh spinach: buy baby spinach leaves over regular spinach.
Instructions
- Cook pasta according to package directions until tender but still firm to the bite. Drain well and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the onions and garlic and cook for 3 minutes, until tender but not brown.
- Add the sun-dried tomatoes and cook for another minute.
- Stir in the wine, shrimp, and clams. Bring the sauce mixture to a boil then reduce the heat and simmer, covered, for 7 minutes, until the shrimp are pink and the clams have opened.
- Add the spaghetti to the seafood mixture with the salt and pepper. Stir to combine.
- Gently stir in the spinach and place on a serving platter. Serve immediately

Top Tips
- After pasta is drained, return to the pot with ½ tablespoon of olive oil to prevent the spaghetti from sticking together.
Storage
Refrigerate: store leftovers in an airtight container in the fridge up to 3 days.
Reheat: gently reheat leftovers in a large pot on the stove top over medium heat until warmed through.
Variations
- Substitute arugula for the spinach.
- Chardonnay can easily be substituted for the pinot grigio, it will add more of a buttery flavor to the dish.
- Feel free to use your favorite seafood combination in place of the clams and/or shrimp
