These Soft Chocolate Chip Cookies take me back to my childhood and walking into Nanny's kitchen, headed right for the cookie cupboard! With their crisp edges and soft tender centers, this old-fashioned cookie one I still love and enjoy sharing with my own children and grandchildren.

Nanny's kitchen was always a place where the grandkids could find a cookie in her cookie jar - and if they weren't any there, she was sure to have some in the freezer! She taught me everything I know about making soft cookie recipes, and I will be forever grateful to her for that!

Why You'll Love Nanny's Soft Cookies
- They stay melt in your mouth soft: Thanks to Nanny's cake flour secret, they don't dry out or get tough.
- A cozy hint of cinnamon: Just a subtle touch of spice that makes the whole house smell exactly like Nanny's kitchen.
- Pure childhood nostalgia: They are quick, simple, and packed with old-fashioned comfort.
The Secret Ingredients to Nanny's Magic
Nanny could make magic out of a nearly empty pantry, but these are the staple ingredients she always relied on to get that soft texture.

- Sifted Cake Flour: this is Nanny's absolute secret for getting that tender crumb. Because cake flour has less protein than regular all-purpose flour, it keeps the cookies incredibly soft instead of tough.
- Unsalted Butter (Softened): Make sure it's truly softened so it creams beautifully with the sugar. This gives it that classic, rich bakery flavor.
- Cinnamon: Don't skip this! It's a tiny touch, but adds a warm background note that sets these apart from a standard chocolate chip cookie.
- Chocolate Chips: Use a good quality dark chocolate chip, and fold them in generously so every single bite gets a sweet, gooey pocket of chocolate.

Nanny's Kitchen Swaps and Substitutions
- All-Purpose Flour: You can swap 1:1 if you're in a pinch, but keep in mind your cookies will turn out a bit denser and heavier.
- Brown Sugar: Nanny stuck to granulated sugar here, Swapping brown sugar adds a nice caramel flavor, but the extra moisture will cause the cookies to spread more and turn out much chewier.
- Alternative Baking Chips: swap dark chocolate out for milk chocolate, white chocolate, or butterscotch chips. Note: Reduce white chocolate or butterscotch by ¼ cup since they are much sweeter.
- Extract Flavorings: Swap vanilla for almond extract or maple extract. Use only ½ teaspoon, as these flavors are much stronger.

Nanny's Tips for Soft Cookies
- Don't Overmix: once you add the dry ingredients, switch to a wooden spoon and stir until the flour just disappears so the cookies stay nice and soft.
- Watch the Oven Closely: take the cookies out when the edges are just barely golden and the tops no longer look wet.
- Sift the Cake Flour: Taking an extra minute to sift your flour ensures a light, air-filled dough and prevents any dense clumps.
