    🔪 Instructions

    1. Pre heat oven to 350 degrees F.
    2. Line 8-inch square baking pan with foil, allowing excess foil to hang over sides of the pan. Lightly spray foil with nonstick cooking spray. Set aside
    3. Combine flour, baking powder and salt in a small mixing bowl. Set aside.
    4. Microwave butter and chocolate in a microwave safe bowl, stirring occasionally, until smooth, about 1 minute. Set aside to cool slightly, 2-3 minutes.
    5. In a large mixing bowl, using a hand whisk, mix eggs and sugar until well combined.
    6. Add chocolate mixture and vanilla extract and mix until well combined.
    7. Using a wooden spoon, gradually stir in dry ingredients until just incorporated. Do not over mix.
    8. Measure 1 cup of brownie batter and set aside.
    9. Pour remaining batter into prepared baking pan, arrange peppermint patties on top of batter, spacing ½ inch apart. Smooth remaining batter over candy.
    10. Bake 30 minutes, until just set in the center and a few moist crumbs stick to a toothpick when inserted into the brownie.
    11. Cool completely on a wire rack. Using foil overhang, lift brownies out of pan and cut into uniform squares.

    📖 Variations

    • Add a sprinkle of crushed candy canes on top of the brownie batter before baking for an extra festive touch.
    • Swap out the peppermint patties with other candy bars like caramel-filled chocolates or peanut butter cups for a different flavor profile.
    • For extra chocolate flavor, sprinkle the top of the unbaked brownie batter with chocolate chips.

    💭 Tips

    • Make sure the melted chocolate and butter mixture is slightly cooled before adding it to the eggs and sugar to avoid scrambling the eggs.
    • Use fun sized peppermint patties for easier distribution and better integration into the brownies.

    🙋 FAQ's

Can I use dark chocolate instead of unsweetened chocolate?

Yes, you can use dark chocolate with a high cocoa percentage, but keep in mind that it will make the brownies slightly sweeter.

Can I double the brownie recipe to make a larger batch?

Absolutely! Simply double all the ingredients and adjust the baking time accordingly.

Can I use peppermint extract instead of peppermint patties?

Yes, you can add ½ to 1 teaspoon of peppermint extract to the batter instead of using peppermint patties. Adjust the amount to your preference.
