    Fudgy Mocha Brownies

    These Mocha Brownies have espresso added to the ingredients to help enhance the chocolate flavor. Topped with toffee pieces, this brownie recipe is thick, fudgy, and a coffee lovers treat!

    This Mocha Brownies recipe combines the delicious flavor of chocolate with espresso enhancing the flavor of these fudgy brownies topped with a toffee crunch.  Thick and rich, these brownies are delicious with a hot cup of coffee or a glass of cold milk!

    🥘 Ingredients

    Cooking spray

    Instant espresso powder or instant coffee granules: I highly recommend Cafe Bustelo.

    Hot water

    Butter

    Semisweet chocolate chips

    All-purpose flour

    Sugar

    Unsweetened cocoa powder

    Baking powder

    Salt

    Vanilla extract

    Large eggs

    Toffee chips

    Dry ingredients and wet ingredients before combing together.
    Dry ingredients and wet ingredients are mixed separately before combining.

    🔪 Instructions

    1. Preheat oven to 350º F.
    2. Coat bottom of a 9-inch square baking pan with non-stick cooking spray.
    3. In a glass measuring cup, combine instant espresso powder and hot water, stirring until espresso powder dissolves.
    4. Place butter and chocolate chips in a small microwave-safe bowl and heat in the microwave on high 1 minute or until butter just melts; stir until chocolate is smooth.
    5. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, sugar, cocoa powder, baking powder, and salt in a large bowl, stirring with a whisk to combine.
    6. Using a hand whisk in a medium bowl, mix the coffee mixture into the butter mixture, along with the vanilla extract and eggs until well incorporated. 
    7. Add wet ingredients to the flour mixture; stirring until dry ingredients are just combined.
    8. Spread brownie batter evenly into prepared pan. Sprinkle evenly with toffee chips. 
    9. Bake brownies for 22 minutes, until top of brownies are no longer wet and when a toothpick is inserted into the center of the brownies, it coms out with just a few crumbs clinging to the toothpick. Cool mocha brownies completely on a wire rack.

    9 inch square baking pan

    Large mixing bowl

    Glass measuring cup

    Small bowl (should be microwave safe)

    A 9 inch square pan makes thick brownies, if you want thinner brownies, use a larger dish and bake for less time.

    🥫Storage

    Room temperature: store brownies in an airtight container up to 5 days.

    Freeze: store in a freezer safe, airtight container up to 3 months.

    📖 Variations

    • Deepen the chocolate flavor more by adding 1 cup dark chocolate chips to the brownie batter
    • ​Eliminate the toffee pieces from the topping and spread with a coffee flavored or peanut butter frosting. Chocolate lovers can top with this delicious chocolate buttercream frosting.

    💭 Tips

    • When checking for doneness, use a toothpick. The brownie batter should not look wet on the top, but it also should have a few crumbs that stick to the toothpick when removing from the center of the brownies. If the toothpick comes out wet, the brownies need to bake longer.
    • The brownies are more fragile when warm, so allow them to cool completely before cutting.
    • These brownies are pretty thick, if you like thinner brownies, you can bake in a larger pan. You will likely need to reduce baking time if you do so.

    Once baked, allow brownies to cool completely before serving. Warm brownies will tend to fall apart.
