Grilled Asparagus Halloumi Salad is served with a savory and delicious Pistachio Pesto for an easy spring recipe that compliments chicken, fish, or beef as a side dish, or enjoyed as a light lunch or dinner on it's own. This is also a keto friendly, lower carbohydrate recipe for those who are carb conscious!

Asparagus is one of our mutually favorite vegetables for Grumpy and I. We love to eat it roasted in the oven with some salt and pepper, drizzled with a little browned butter balsamic dressing. Now that we are into grilling weather, we love to cook it on the grill!

Springtime recipes are normally reminiscent of light, bright flavors. This grilled asparagus recipe is the epitome of that description! This recipe could not be any simpler! You make my recipe for Homemade Pistachio Pesto made ahead of time or you can serve this with a store bought pesto.

Below are the ingredients you will need to make this side dish recipe:
- Fresh asparagus
- Lemons
- Olive oil
- Black pepper
- Halloumi cheese
- Pistachio pesto or basil pesto

๐ช Instructions
- Preheat grill to 350 degrees F.
- In a large bowl, whisk together lemon juice, olive oil, and pepper.
- Add asparagus and toss to coat.
- Grill asparagus until tender, about 5-7 minutes (depending on the thickness of the stalks), turning often.
- Brush halloumi cheese with marinade and grill on both sides to get grill marks and cheese is hot.
- Serve grilled asparagus with grilled halloumi cheese, pistachio pesto, and a drizzle of fresh lemon juice.

- Veggie swap: use your favorite garden veggie in place of asparagus. Zucchini sticks, eggplant slices, green beans are all excellent choices.

Store leftover asparagus and halloumi in separate airtight containers in the fridge up to 3 days. Reheat gently on the grill or in the air fryer until warmed through to serve.
Tips
- To trim the asparagus, hold the spear in your hands with one at the tip and the other at the stalk. Bend the asparagus spear until it breaks. The tough part of the stalk will then be removed and can be discarded.
