Ingredients

medium
zucchini
sliced (about 2 cups)

tablespoon
olive oil
8
ounces
sliced raw mushrooms
1
small
small onion

cloves
garlic
sliced
½
cup
shredded white cheddar cheese
½
teaspoon
basil
Instructions
Preheat the oven to 350 degrees.
Add the zucchini, mushrooms, onion, and garlic to a large mixing bowl.
Drizzle with the olive oil and sprinkle with Italian seasoning, then toss to coat. Transfer the zucchini mixture to a large casserole baking dish.
Cover with aluminum foil and bake at 350° for 20 minutes.
Uncover the zucchini bake and sprinkle with the cheese. Bake uncovered for 10 minutes or until vegetables are tender.
