These Dehydrated Zucchini Chips are a crispy, low-carb snack made with just three ingredients. They're light, salty, and full of flavor thanks to a sprinkle of Everything But The Bagel Seasoning.

I started making these chips when we had more zucchini than we knew what to do with. If you grow your own, you know how fast they get away from you! They reminded me of the easy snacking comfort of tortilla chips, but with the simplicity and nutrition of fresh garden vegetables.

How to Store
Store fully dehydrated chips in an airtight container at room temperature for up to 1 week. For longer shelf life, keep them in a sealed bag with a moisture absorber packet.

Dehydrated Zucchini Chips with Everything but the Bagel Seasoning

Ingredients
- 6 cups zucchini , sliced at ⅛" inch
- 2 tablespoons olive oil
- 2 tablespoons Everything but the Bagel Seasoning , optional
Instructions
- Place zucchini slices on dehydrator. Be sure to not overlap slices.
- Using a pastry brush, lightly coat the top side of zucchini with olive oil.
- Sprinkle each slice of zucchini with Everything but the Bagel Seasoning
- Place trays in dehydrator and set time for 6-½ hours.
- If zucchini chips are still not crisp at the end of dehydrating time, set the dehydrator for 30 more minutes. Continue until chips dehydrated.
- Store in a ziploc bag with the air removed from the bag as much as possible. Do not refrigerate.

I notice on ur zucchini chips u don't have a temperature to cook at. I have the air fryer 360 so u have to set a temp to dehydrate.
Can u tell me what the temp should be set at?

Hi Jean, unfortunately, I am not familiar with the air fryer 360 however I did some research for you and found that for the Power AirFryer 360, you should dehydrate at 115 for 8-10 hours. I hope this helps you out. Shelby

I had a chance to try them.. I used a different flavoring. They turned out ok... I think though they need to be sliced a little thicker. My centers all stuck to the trays!

Hi Karen, thanks for trying out the recipe! My first batch stuck to the tray also. I did mention this in the post and that is why I cut mine thicker. I still had a few where the center stuck, but I think it is because it was a large zucchini, but most of mine did not stick after I sliced thicker.

The dehydrator I recommend has a setting for fruits and veggies, so you just choose that setting. If your dehydrator has a temp setting, I would set it at 130-140 degrees. If you want to use the oven set the temp at the lowest setting for 5-6 hours.
