Creamy Cheeseburger Soup

Ingredients
- 1 pound ground beef
- 3 medium potatoes peeled and diced
- 4 ounces chopped mushrooms
- ¼ cup diced carrot
- ¼ cup diced onions
- 1 jalapeno pepper diced
- 1 clove garlic minced
- ¼ teaspoon black pepper
- 1½ cups beef broth
- 3 cups milk divided
- 3 tablespoons flour
- 8 ounces velveeta cubed
- 4 slices cooked bacon crumbled (optional)
- 2 tablespoons chopped chives optional
Instructions
- In a large dutch oven over medium heat, cook the ground beef until it begins to brown. Add the potatoes, mushrooms, carrots, onions, jalapeno, garlic, and pepper. Cook for 5 minutes, or until the veggies are tender and meat is browned.
- Drain any excess fat. Return the pan to the cooktop and stir in the beef broth and 1 ½ cups of the milk. Bring the cheeseburger soup to a boil.
- Whisk together the remaining milk and the flour until no lumps remain. Add the flour mixture into the soup stirring constantly. Continue to cook for 2 minutes, or until the soup begins to thicken.
- Add the cheese to the soup and stir until the cheese has melted. Serve with bacon and chive garnish (if using).
