Cheeseburger soup is a creamy, hearty dinner that combines beef, potatoes, and cheese into one satisfying bowl. A cozy recipe perfect for family meals.
In a large dutch oven over medium heat, cook the ground beef until it begins to brown. Add the potatoes, mushrooms, carrots, onions, jalapeno, garlic, and pepper. Cook for 5 minutes, or until the veggies are tender and meat is browned.
Drain any excess fat. Return the pan to the cooktop and stir in the beef broth and 1 ½ cups of the milk. Bring the cheeseburger soup to a boil.
Whisk together the remaining milk and the flour until no lumps remain. Add the flour mixture into the soup stirring constantly. Continue to cook for 2 minutes, or until the soup begins to thicken.
Add the cheese to the soup and stir until the cheese has melted. Serve with bacon and chive garnish (if using).

Tips and Substitutions
Use leftover potatoes or cook the potatoes ahead of time and cool them down to dice
If there is a lot of fat in the pot, be sure to drain before adding the liquids
If you want a thinner soup, reduce the flour to 2 tablespoons
Add a can of drained diced tomatoes
Stir some cooked bacon into the soup for a bacon cheeseburger soup
For a creamier soup, stir in ¼ cup of sour cream at the end
Top with shredded cheese and croutons in place of the bacon (or with the bacon!)
