Buffalo Chicken Sliders

Ingredients
- 3 cups shredded rotisserie chicken
- ¼ cup red hot sauce
- ¼ cup unsalted butter
- 1 tablespoon honey
- 1½ cups shredded mozzarella cheese divided
- ¼ cup crumbly blue cheese
- 1½ tablespoons sesame seeds optional
- 12 Sweet Hawaiian rolls split in half
Instructions
- Preheat the oven to 350 degrees F.
- Melt the butter for 30-60 seconds, In a glass 1 cup measure.
- Stir the hot sauce into the melted butter then stir in the honey.
- Place the shredded chicken in a large 4 cup measure. Pour all but ¼ cup of the hot sauce mixture over the shredded chicken and toss to coat.
- Line a baking dish with parchment paper and lay the bottom half of the slider rolls in the baking dish.
- Sprinkle the bottom of the slider rolls with ¾ cup mozzarella cheese. Spread the chicken over the top of the cheese.
- Sprinkle the remaining mozzarella cheese on top of the chicken mixture, then sprinkle the blue cheese crumbles over top of the mozzarella.
- Place the top half of the slider rolls on the chicken and cheese mixture, cut side down. Using a silicone pastry brush, cover the tops of the slider rolls with the remaining hot sauce mixture. Sprinkle with sesame seeds (if using).
- Cover the sliders with aluminum foil and place in the oven to bake for 30 minutes. Remove the foil, and continue baking the sliders for 10 minutes, or until the cheese has melted.
