Instructions
Place the avocado in a small bowl and season with salt and pepper. Using the tines of a fork, mash avocado to make it spreadable.
Spread the mashed avocado on the bottom slice of bread.
Next, top avocado layer with tomato slices, red onion slices, cucumber slices, and a handful of alfalfa sprouts.
Spread the remaining piece of bread with chipotle mayo. Place spread side down on alfalfa sprouts. Cut and serve as desired.
