Carrot sticks: choose small sweet carrots or baby carrots that aren't too thick for the most tender carrot fry.
Avocado oil: cooking spray can be substituted to reduce fat

For the sweet and spicy dipping sauce
- In a small bowl, stir together the mayonnaise, honey, chili oil, and minced garlic until well combined. Cover and chill until ready to serve.
To prepare the carrots fries
- Cut carrots into 3” long fry shaped pieces
- Place cut carrots in a large bowl and drizzle with avocado oil.
- Add salt, garlic powder, and paprika, then stir to coat carrot fries.
- In a small bowl, add the grated parmesan cheese. Place carrot fries in the cheese and toss to coat completely.
- Place carrots in a single layer in an air fryer basket and set temperature to 400°f for 13 minutes cooking time, until carrots are crispy and golden brown.
- Remove carrots from the air fryer and allow to cool slightly before removing from the air fryer basket. Serve with sweet and spicy dipping sauce if desired.
