    This Weight Watchers Meatloaf recipe is a low carb, protein packed easy meal that is full of veggies and only 5 WW points per serving. It is comfort food that you can afford while on a healthy eating plan.

    This particular recipe is one of my favorites that I have made for many years now. With just 7 grams of fat and very few calories per serving this amazing recipe will allow you to leave the table full and satisfied without breaking the points bank..

    🥘 Ingredients

    Extra lean ground beef

    Reduced calorie wheat bread

    White onion

    Red pepper

    Jalapeno or green bell pepper

    Garlic cloves

    Italian seasoning

    Salt and black pepper

    Sugar free ketchup

    Nonstick cooking spray

    Ingredients for meatloaf that have not been mixed together in a bowl.
    The veggies can be sauted or added raw to the meatloaf mixture.

    🔪 Instructions

    1. Preheat the oven to 350 degrees F. Spray loaf pan with non stick cooking spray.
    2. In a large bowl, combine beef, bread crumbs, onion, peppers, garlic, italian seasoning, salt and pepper until combined.
    3. Pack the meatloaf mixture tightly into the prepared loaf pan.
    4. Spread ketchup on top of the loaf and bake for 45 minutes, until internal temperature reaches 165 degrees F on a meat thermometer inserted into the center of the loaf.

    🥫Storage

    Store any leftover meatloaf in the fridge up to 4 days or in the freezer up to 3 months.

    To reheat, place meatloaf in a microwave safe container and heat for 30-60 seconds, until meatloaf is warmed through.

    📖 Variations

    • Ground turkey breast or ground chicken can be used in place of the ground beef.
    • Pack the meat mixture into muffin tins to make meatloaf muffins.
    • Use regular ketchup in place of sugar free, just remember the sugar content will change as well as the points value.
    • Substitute ½ cup quick oats in place of the reduced calorie bread.
    • Substitute ¼ cup barbecue sauce or pizza sauce for the ketchup. Use a sugar free version if possible or nutritional information will change.
    • To reduce fat more, substitute 2 egg whites for 1 whole egg.
    • For extra tang and sweetness, stir in ½ tablespoon brown sugar substitute with 1 teaspoon cider vinegar to the ketchup.

    💭 Top Tip

    • If desired, soften the onions and peppers by sauteing them in a large nonstick skillet coated with cooking spray over medium heat. Allow to cool, then add to the meatloaf mixture.

    🏫 The last word

    Often times, making weight watcher recipes is as easy as making a small change or two to the ingredients. For this recipe, I used lean ground beef, sugar free ketchup, light wheat bread (that is only 45 calories for 2 slices), and a lot of veggies.

    I personally like my veggies to have a toothsome bite, but for those who do not care for this can saute the veggies by following the top tip above.

    For the weight watcher points calculation, I used calculator.net and use the most recent calculator for the ww plan. This is the one that is dated from Dec 2015 and on.

    • 1 pound lean ground beef
    • 4 slices reduced calorie wheat bread
    • 1 large egg
    • ½ small onion , diced
    • ½ medium red bell pepper
    • 1 small jalapeno , optional
    • 1 tablespoon minced garlic cloves
    • 1 teaspoon Italian seasoning
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 2 tablespoons sugar free ketchup

    Instructions
