Weight Watchers Meatloaf
A low calorie, high protein, low carb veggie packed meatloaf that fits the weight watchers diet with only 5 WW Points per serving.

- 1 pound lean ground beef
- 4 slices reduced calorie wheat bread
- 1 large egg
- ½ small onion , diced
- ½ medium red bell pepper
- 1 small jalapeno , optional
- 1 tablespoon minced garlic cloves
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons sugar free ketchup
Instructions
- Preheat the oven to 350 degrees F. Spray loaf pan with non stick cooking spray.
- In a large bowl, combine beef, bread crumbs, onion, peppers, garlic, italian seasoning, salt and pepper until combined.
- Pack the meatloaf mixture tightly into the prepared loaf pan.
- Spread ketchup on top of the loaf and bake for 45 minutes, until internal temperature reaches 165 degrees F on a meat thermometer inserted into the center of the loaf.
- Remove the meatloaf from the oven and cool for 15 minutes before serving.
