Strawberry Cheesecake Parfait

Ingredients
- 2 cups quartered fresh strawberries
- 1 cup reduced fat cream cheese softened
- ½ cup part skim ricotta cheese
- ¼ cup granulated sugar
- ¼ cup strawberry jam
- ½ cup crushed nilla wafers
- 1 teaspoon vanilla extract
- 4 tablespoon whipped cream
Instructions
- In a medium mixing bowl, using a hand mixer, mix the ricotta cheese, cream cheese, and sugar until smooth. Refrigerate.
- In a small mixing bowl, combine the strawberry jam and strawberries.
- Spoon ¼ cup of strawberry mixture into each 8 ounce parfait glass. Layer with 2 tablespoons of ricotta mixture, 2 tablespoons of cookie crumbs, 2 tablespoons of ricotta mixture, ¼ cup strawberry mixture and 1 tablespoon of whipped topping.
